Nineteen percent of the apples harvested are diverted to processing. Apple pomace is the major waste product of the apple juice industry, the main processor of apples. The pomace contains less than 5% reducing sugar and negligible amount of nitrogen/protein left for any use. The aim of this research project is to ferment the pomace to produce a marketable product and have the remaining waste be a useable product in itself. Aspergillus niger ATCC 76557 was used for production of citric acid by solid substrate fermentation. Influence of inoculum size, temperature and moisture content on citric acid formation and on the increase in the protein content of the fermented apple pomace was the focus of the study. The pH of the pomace changed from 5.0 to 3.0. A. niger inoculum used was a spore suspension adjusted to 0.5 A 440 and the inoculum size varied from 0.2 ml to 10.0ml. With an increase in moisture content, over an eight day fermentation period, the soluble protein content increased from three to ten fold and total protein up to a five fold increase. Although this gave the greatest increase in protein content, the run with the highest initial glucose content and 50 ml of water added had the most influence on citric acid production. Reverse phase HPLC showed that citric acid along with additional organic acids were responsible for the decreased pH values that were recorded throughout the fermentation period. The inoculum size had no affect on the level of soluble protein over the fermentation period, but did influence the citric acid production resulting in a 10 fold increase in the yield when 5.0 ml inoculum was added opposed to 2.0 ml inoculum. Although the visible growth of the fungal mass on the apple pomace was better at optimum conditions, it had no significant effect on citric acid production"--Document.

In fact, this process is very old. In older industries such the food and agricultural, this technique has been extensively used. An example of this is the production of pork sausages and Roquefort cheese.
