Available in PDF, EPUB and Kindle. Book excerpt: Foodborne illness is a big problem. Wash those chicken breasts, and you’re likely to spread Salmonella to your countertops, kitchen towels, and other foods nearby. Even salad greens can become biohazards when toxic strains of E. coli inhabit the water used to irrigate crops. All told, contaminated food causes 48 million illnesses, 128,000 hospitalizations, and 3,000 deaths each year in the United States. With Outbreak, Timothy D. Lytton provides an up-to-date history and analysis of the US food safety system. He pays particular attention to important but frequently overlooked elements of the system, including private audits and liability insurance. Lytton chronicles efforts dating back to the 1800s to combat widespread contamination by pathogens such as E. coli and salmonella that have become frighteningly familiar to consumers. Over time, deadly foodborne illness outbreaks caused by infected milk, poison hamburgers, and tainted spinach have spurred steady scientific and technological advances in food safety. Nevertheless, problems persist. Inadequate agency budgets restrict the reach of government regulation. Pressure from consumers to keep prices down constrains industry investments in safety. The limits of scientific knowledge leave experts unable to assess policies’ effectiveness and whether measures designed to reduce contamination have actually improved public health. Outbreak offers practical reforms that will strengthen the food safety system’s capacity to learn from its mistakes and identify cost-effective food safety efforts capable of producing measurable public health benefits.

Book excerpt: This document presents a set of criteria and traceability requirements to guide actors within the food industry to develop and implement a traceability system in selected food sectors that allows them to respond rapidly to food safety events. The document was elaborated under the FAO project: TCP/SLC/3403 – “Strengthening capacity for a rapid response to food safety events through enhancement of the food traceability and recall legislation and systems in the Caribbean Sub region” and validated based on several pilots conducted within the EU-funded project implemented by IICA (‘SPS Project’): Support to the Forum of Caribbean States in the implementation of the commitments undertaken under the Economic Partnership Agreement (EPA): Sanitary and Phytosanitary (SPS) Measures”. This document covers specific sectors that were identified in each of the four beneficiary countries for the provision of detailed guidance within the scope of TCP/SLC/3403 and the SPS Project. These are:  Antigua and Barbuda- fisheries, pineapple, carrot and onion sectors  Barbados- poultry, fisheries, and condiments sectors  Dominica- fresh produce, agro-processing and fisheries sectors  Grenada- nutmeg, cocoa, fisheries, and fresh produce sectors This practical Guidance is intended for those responsible for implementing traceability in their organization’s operations and supply chain. The scope establishes both the minimum requirements and the best practices for the sharing of information along the supply chain. This guide covers:  Traceability practices from the supplier’s processing facility to the point of sale to the consumer;  All food products for human consumption;  All levels of the product hierarchy, including pallets, cases and consumer items; and  All supply chain segments including, suppliers, wholesalers, distributors, and retailers. The minimum requirements presented in this Guidance are based on the assessment of the available national legislation or legislation that may support or influence food traceability and recall in each beneficiary country, the evaluation of the traceability situation on-site, the results of the pilots, the US and Europe traceability legislation, and the best practices recommended based on the information collected from several referenced documents. After introductory chapters about general background, Traceability and Recall definitions, system requirements and references used, this document devotes several chapters to present detailed and specific implementation traceability and recall guidelines for growers, packers, exporters / importers, manufacturers, processors and distributors as well as their customers and suppliers with examples and business scenarios.

Book excerpt: A solid international consensus has emerged on the importance of nutrition for children’s development and well-being. At the Second International Conference on Nutrition (ICN2), the Member States of the Food and Agriculture Organization of the United Nations (FAO) and the World Health Organization (WHO) committed to developing policies, programmes and initiatives to ensure healthy diets throughout the children’s life cycle, emphasizing the potential of schools as platforms for integrated action. This Guide promotes a holistic and human rights-based approach to school food and nutrition, in which legislation is an indispensable tool to ensure the sustainability of public policy goals set by a country. In light of international law and standards, it provides practical information and guidance to develop or strengthen national legislation to improve food security and nutrition in schools as well as community development. The Guide presents a range of regulatory options and legislative examples of state practice that may contribute to building sound and coherent legal frameworks for school food and nutrition. It is a useful resource for law practitioners, policymakers, parliamentarians, and all actors who are involved in the design, implementation, or monitoring of school programmes and policies and most particularly, for those interested in taking legislative action (law-making or law reform).

Available in PDF, EPUB and Kindle. Book excerpt: Global value chains (GVCs) powered the surge of international trade after 1990 and now account for almost half of all trade. This shift enabled an unprecedented economic convergence: poor countries grew rapidly and began to catch up with richer countries. Since the 2008 global financial crisis, however, the growth of trade has been sluggish and the expansion of GVCs has stalled. Meanwhile, serious threats have emerged to the model of trade-led growth. New technologies could draw production closer to the consumer and reduce the demand for labor. And trade conflicts among large countries could lead to a retrenchment or a segmentation of GVCs. World Development Report 2020: Trading for Development in the Age of Global Value Chains examines whether there is still a path to development through GVCs and trade. It concludes that technological change is, at this stage, more a boon than a curse. GVCs can continue to boost growth, create better jobs, and reduce poverty provided that developing countries implement deeper reforms to promote GVC participation; industrial countries pursue open, predictable policies; and all countries revive multilateral cooperation.

Book excerpt: The first edition of Food processing technology was quickly adopted as the standard text by many food science and technology courses. This completely revised and updated third edition consolidates the position of this textbook as the best single-volume introduction to food manufacturing technologies available. This edition has been updated and extended to include the many developments that have taken place since the second edition was published. In particular, advances in microprocessor control of equipment, 'minimal' processing technologies, functional foods, developments in 'active' or 'intelligent' packaging, and storage and distribution logistics are described. Technologies that relate to cost savings, environmental improvement or enhanced product quality are highlighted. Additionally, sections in each chapter on the impact of processing on food-borne micro-organisms are included for the first time. - Introduces a range of processing techniques that are used in food manufacturing - Explains the key principles of each process, including the equipment used and the effects of processing on micro-organisms that contaminate foods - Describes post-processing operations, including packaging and distribution logistics
