In case ofBeta Casein, Kappa casein, Alpha lactalbuminand Beta lactoglobulin different phenotypes described as AA, BB, & AB were recognied. In Sahiwal and Red indhi both alpha S1 casein BB and Kappa were totally absent. In case of Murrah buffaloes, all milk proteins except Beta casein were observed to be monomorphic. In tudying the association ofgenes certain combinations like Alpha S1 casein/Beta lactoglobulin B, Kappa casein A/beta lactoglobulin B in tharparkar and Alpha lactalbumin B and beta lactoglobulin B in red sindhi were more closely associated than the others. Seaconal effects were significant in all breeds of cattle for curd tension and only in tharparkar and sahiwal breeds for heat stability significantly higher values of curd tension were observed during winter where as higher values of heat stability were seen during summer and monsoon seasons as compared to those of winter lactational stages had significant influence on heat stability in cross bred cows and on curd tension in murrah buffaloes. Higher values for heat stability were observed during the first two stages of lactation where as murrah buffaloes showed higher curd tension during the last two stages of lactation.
