Book excerpt: Abstract: Data are presented in 3 major food composition tables for the nutrient content of foods consumed in the Near East, including the amount of the various nutrients in 100 g of the edible portion of the food and the amount in the edible portion of 100 g of the food as purchased. The 3 major tables provide food composition data for: the proximate composition, mineral and vitamin content of the foods; the amino acid content; and the fatty acid content. The foods are organized under each of these tables into 14 food classes (e.g., cereals and grain products, sturdy roots and tubers, nuts and seeds, vegetables, fruits, meat and poultry, eggs, etc.). Five appendices (e.g., factors used to calculate food nutrient contents, common names of foods, scientific names of plants and fish) and 3 bibliographies (data sources for food composition tables, scientific nomenclature of plants and fish, descriptions of selected processed foods) are included. Available in PDF, EPUB and Kindle. Book excerpt: In examining the relationship between nutritional exposure and disease aetiology, the importance of a carefully considered experimental design cannot be overstated. A sound experimental design involves the formulation of a clear research hypothesis and the identification of appropriate measures of exposure and outcome. It is essential that these variables can be measured with a minimum of error, whilst taking into account the effects of chance and bias, and being aware of the risk of confounding variables. The first edition of Design Concepts in Nutritional Epidemiology presented a throrough guide to research methods in nutritional epidemiology. Since publication of the 1st edition, we now have a much better understanding of the characteristics of nutritional exposure that need to be measured in order to answer questions about diet-disease relationships. The 2nd edition has been extensively revised to include the most up-to-date methods of researching this relationship. Included are new chapters on qualitative and sociological measures, anthropometric measures, gene-nutrient interactions, and cross-sectional studies. Design Concepts in Nutritional Epidemiology will be an essential text for nutritionists and epidemiologists, helping them in their quest to improve the quality of information upon which important public health decisions are made.

Book excerpt: Parmana: Prehistoric Maize and Manioc Subsistence along the Amazon and Orinoco argues for a reinterpretation of prehistoric subsistence in the Greater Amazonian region of South America. Based on the preliminary results of an archaeological fieldwork in Parmana of the Orinoco basin, Venezuela, the book re-evaluates some of the assumptions made by anthropologists about human adaptation and the development of aboriginal culture in Amazonia. Comprised of six chapters, this volume begins with a review of the theories of five scholars of aboriginal Amazonia in terms of logic and documentation: Julian Steward, Betty Meggers, Robert Carneiro, Donald Lathrap, and Daniel Gross. The next chapter presents an alternative theory, the hypothesis of technological change, and explains its theoretical framework. The demographic theory of cultural evolution is discussed, and its basis in general evolutionary theory is explained. Subsequent chapters focus on the empirical evidence for the hypothesis in studies of tropical resources, with emphasis on the productivity of tropical lowland soils and Amazonian faunal resources as well as the roles of maize and manioc in prehistoric Amazonian subsistence; the physical and biological characteristics of the Parmana region as an environment for prehistoric human adaptation; and the history of subsistence and population growth in prehistoric Parmana. The final chapter suggests possible directions for future research on the development of aboriginal culture in Amazonia. The book is illustrated with numerous maps, tables, and photographs, most of them never published before. This monograph should be of interest to archaeologists and anthropologists.

Available in PDF, EPUB and Kindle. Book excerpt: The science of nutrition has advanced beyond expectation since Antoine La voisier as early as the 18th century showed that oxygen was necessary to change nutrients in foods to compounds which would become a part of the human body. He was also the first to measure metabolism and to show that oxidation within the body produces heat and energy. In the two hundred years that have elapsed, the essentiality of nitrogen-containing nutrients and of proteins for growth and maintenance of tissue has been established; the ne cessity for carbohydrates and certain types of fat for health has been docu mented; vitamins necessary to prevent deficiency diseases have been identified and isolated; and the requirement of many mineral elements for health has been demonstrated. Further investigations have defined the role of these nutrients in metabolic processes and quantitated their requirements at various stages of development. Additional studies have involved their use in the possible prevention of, and therapy for, disease conditions.
