Book excerpt: Excerpt from Feeding the Family While many things contribute to health, sleep, fresh air, and exercise, for instance, - the foremost considera tion is food. This is recognized to-day as never before, and those who regard their own welfare and desire to give their children the best possible equipment for the stress of modern life are asking how to choose food wisely. So many kinds of food are displayed in our markets, and so many placards offer warning or advice about what to eat, that a guidebook to good nutrition would seem quite essential for the twentieth century family. The purpose of the author has been to provide such a little book for the numerous housewives who pre pare something like a thousand meals a year for their families and who wish to know how the science of nutrition can be made to function most successfully in their daily lives. Book excerpt: Excerpt from Infant Food and Infant Feeding From various causes, it happens that a large percentage of infants are deprived of their natural nourishment, and it becomes necessary to resort to some substitute to sustain life. This deprivation of their natural food is sometimes complete, but more often it is only partial. It is difficult to say whether this percentage of infants deprived of mothers' milk is on the increase or not. Judging from the number of so-called Infant Foods on the market, the number of children who derive at least a part-of their sustenance from this artificial source must be much greater than is commonly supposed. In many cases, no doubt, it is absolutely impossible for the child to obtain nourish ment from the mother. Under such circumstances, of course resort must be had to some other food. Whenever the food is other than that provided by nature, too much care cannot be exercised in se lecting that which most resembles, in its chemical and physiological properties, that most suitable of all infant foods - mothers' milk. Book excerpt: Excerpt from What to Feed the Family A great many women, vitally interested in supplying their families with the proper kind of food, complain of the dearth of concise, practical, and accurate information in this particular field. They do not have time for reading entire volumes and puzzling out the meaning of the scien tific terms, and, from the woman's pages in the various magazines, they can only gather together a mass of un related, unorganized, and perhaps inaccurate material, which they find of little practical use. The literature re lating to this subject is growing more and more puzzling with its constant references to those mysterious some things that food must contain in order to promote proper growth and health. How is it possible to know that the rapidly growing bodies of the children are being supplied with everything necessary for their best physical develop ment, and that the food for the grown-ups is compatible with their digestive powers and sufficient for energy and repair demands? Book excerpt: Excerpt from Poultry Foods and Feeding: A Manual for All Breeders The thoughtful reader must agree that the presence or absence of certain constituents in the food consumed by man and beast (or bird) must have a cumulative, even if not an immediate effect. Disuse of any part or function is followed by atrophy and disappearance. Chemists teach that between even the cells of which our bodies are built up there is a never-ceasing inter change of compounds, depending upon chemical and enzyme action. There can be no such action if the chemical constituents are absent or altered, or if, through cumulative effects extending through generations, the work of the enzymes, or their very nature, is altered. No single system of feeding, nor group of foods, can produce the universal panacea for the many troubles which may rightly be traced to improper feeding. That the medical world is alive to this fact may be seen on reference to the Special literature circulating among the profession. Previous to the appearance of this volume, though much scientific and practical work had been done on the nutrition of the infant, it was all more or less frag mentary, and there had been no extended attempt to sepa rate the good from the bad. Book excerpt: Excerpt from Harvard Health Talks: The Care and Feeding of Children The cause of the decay of food ma terials, as is of course now very generally known, is the presence of bacteria in them. With the discovery of these organ isms (the study of which has since devel oped into the science of Bacteriology) it became clear that the way to prevent the decay of organic materials is to exclude the bacteria or to kill them. And as to exclude them mechanically from foods is practically impossible, the problem of pre serving foods became the problem of ren dering foods unfit for bacteria to live in. Book excerpt: Excerpt from Farm Foods: Or the Rational Feeding of Farm Animals As long ago as the year 1868, when the first edition of my 'Practical System of Manuring' appeared, I had pledged myself to bring out a companion volume, in which the nutrition of the body and the economy of Farm Food-stuffs should be treated on similar lines. But at the same time I expressed my intention of reserving the work until the principles underlying its teaching had been placed upon a clear and systematic basis. The science of Agricultural Dietetics was then beginning to assume definite proportions, and from the great energy with which it was being prosecuted it seemed more than probable that in a very short time it would attain a position which would enable it to offer practice a firmer and sounder support for the acceptance of the latest scientific principles. In my opinion that time has now come. Thanks mainly to the rich harvest of results which has rewarded the zealous labours of the Munich School of Physiology, the general laws of animal nutrition, as well as those of flesh- and fat-formation in the animal body, are now clear and patent; the necessary investigations which were so admirably executed by Voit and Pettenkofer have attained a present conclusion. This food may vary within certain limits; beyond them disease sets in, even if life continues. Every child who has kept chickens or rabbits knows how carefully and regularly they need to be fed. Every child who has grown house plants or cultivated a garden plot knows how necessary air, water, and soil are for their life and growth. It is only needful to transfer this knowledge to ourselves to see that we, as living beings, need our food in the same way; and that air and water, as well as meat and milk, sugar and eggs, are our foods, without which we cannot live. Book excerpt: Excerpt from Observations Upon the Natural History of Epidemic Diarrhoea The causative agencies from which springs the plentiful harvest of child mortality in large cities may be conceived as a felted mass of rootlets almost inextricably intertwined. Those of poverty, bad housing, bad feeding, and neglect, may be severally recognized, but the extent of their interrelations with actual respiratory and alimentary disease - those to which the greater part of the mortality is referred - can be traced only with difficulty. It is the object Of this work to aid ln the labour of cutting away the matrix and entangling fibres and to lay bare the hidden ramifications of at least one important causative agency - epidemic diarrhoea. This affection - if we accept provisionally the more novel and generally favoured conception. As to its nature - is revealed as something very like an ordinary infectious disease, and one which permeates all classes, while the excessive mortality it gathers round itself in urban centres must be regarded as something superadded, owing to the vicious circle it forms with those baneful conditions of slum life mentioned above. On the other hand, its peculiarly intimate association with the circum stances of domestic life, from the continual faecal pollution of the interior of the household by infants and others, tends to make it more so than other affections of the kind peculiarly a class disease, and an especial scourge of dirty neighbourhoods. Dirty towns may however be saved from excessive mortality by a high percentage of breast feeding. A notable point in the interesting comparison that can be drawn between diarrhoea and typhoid fever is that, in accordance with their peculiarly opposite age-incidence curves, the marked and habitual depositing of infectious excreta within the household in the former disease may make the question of water-closet versus conservancy pan a matter of far less importance than in the latter. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Food and Feeding in Health and Disease: A Manual of Practical Dietetics The aim of this work is purely practical. It aims at providing a complete and practical epitome for the dietetic student. It is now many years since the late Sir Henry Thompson, a distinguished authority on dietetics, pointed out that no one can be a really accomplished practitioner who has not made dietetic principles and practice an important part of their professional education, yet the subject of dietetics has still no recognised place in medical teaching, and the facilities for the student acquiring a practical knowledge of it can hardly be described as adequate. The first thing necessary for food and feeding in health and disease is to be well instructed in the elements of physiology, the nature of foods, the normal laws of feeding, as well as in the deviation by which the action of these laws is modified. To this must be added some practical acquaintance with kitchen usage and processes. A certain familiarity with the resources of the cook is essential to provide a suitable daily menu which will be agreeable to the invalid, and as much as possible varied within the narrow limits induced by the circumstances of each case. In the following pages an attempt is made to present this information concisely, and applied, so far as possible, to the everyday requirements of the medical practitioner. In the preparation of the work I have derived much help (more especially with the data of the chemical composition of foods) from many sources, special mention being made of the writings of Atwater, Langworthy, and of the analytical reports published from the Lancet laboratory. Book excerpt: Excerpt from Food and the Principles of Dietetics The contents of this book were first addressed to the students of the London Hospital in the form of a course of lectures about a year and a half ago. The very gratifying reception accorded to these lectures and the almost total neglect of the subject of dietetics in ordinary medical education have induced the author to publish them in their present form. While the book has been specially designed to meet the require ments of students and practitioners of medicine, it is hoped that it may also prove intelligible and interesting to anyone desiring to acquire some knowledge of foods and the difficult problems, of nutrition.
