Book excerpt: In addition to its value as a fisheries resource, the eastern oyster Crassostrea virginica, is a reef building, cornerstone species that provides ecosystem services to the environment. Oysters provide habitat for associated resident and transient species. With widespread declines in oyster populations, restoration efforts have focused on improving oyster stocks and enhancing the ecosystem services they provide. Community-based oyster restoration programs engage the public and local community in planning, construction and/or monitoring of restoration projects. Since 2007, a K-12 student centered community-based restoration venture, Project PORTS, Promoting Oyster Restoration Through Schools, has been working to educate students, promote stewardship values, and enhance oyster habitat in the Delaware Bay. The overarching goals of the present study were to (1) assess fish and macroinvertebrate utilization on the Project PORTS community-created, subtidal, low-relief oyster restoration area in the Delaware Bay, and (2) convert the data collected into a STEM (Science, Technology, Engineering and Mathematics) activity that can be implemented in the classroom. I examined six subtidal natural oyster reefs of varying oyster densities and one community-based restoration reef as habitat for fishes and invertebrates. Sampling methods on these low-relief reefs consisted of otter trawl tows and benthic habitat tray collections. Results revealed that the enhancement area supported a diverse faunal community consistent with nearby, natural oyster habitats. Data collected during the field study were then transformed into an educational lesson plan, "One Fish, Two Fish- Assessing Habitat Value of Restored Oyster Reefs", that fulfilled national and state (NJ) curriculum standards. The lesson was piloted in a middle school classroom and student learning was evaluated through summative assessments pre and post-participation in the activity. Results of the assessments indicated that students made strong gains in knowledge of oyster ecology and improved analytical skills by graphing data. This dual interest study demonstrated that a novel education program with a local, real-world connection positively enhanced crucial estuarine habitat while expanding STEM knowledge and skills of participating students.

Book excerpt: The Cape Shore on the New Jersey side of Delaware Bay USA is an extensive high-energy polyhaline intertidal zone that consistently receives the highest oyster (Crassostrea virginica) settlement in the Bay. Intertidal oyster reefs in lower Delaware Bay are ephemeral, and it is generally assumed that oyster mortality due to predation, disease and winter ice scouring inhibit their persistence. If protected, however, oysters survive and grow well; hence, oyster aquaculture is developing at the site. In June 2006, shell-bag oyster reefs of varying height were constructed on the intertidal sand flats in lower Delaware Bay to determine the potential for oyster reef restoration in this temperate estuary. Oysters survived a heavy formation of ice during winter 2007, but shifting sediments nearly buried the shortest reef by April 2007, a process that may be important in limiting the development of oyster reefs in this system. In May 2007, six 2-layer shell-bag reefs were constructed. These constructed reefs as well as rack and bag oyster culture systems provided semi-permanent structures that form potential habitats for motile fauna on the sand flats of the Cape Shore. To assess the habitat potential of these structures, constructed reefs, aquaculture racks and adjacent sand flats were monitored for utilization by motile macrofauna using wire mesh traps, crab pots and eel traps from May through October 2007. Species richness for aquaculture racks (25 species) and shell-bag reefs (22 species) were comparable and significantly greater than on the sand flats (17 species). Seven species were unique to aquaculture racks. Species abundance was five times greater around aquaculture racks and three times greater around shell-bag reefs compared to sand flats. Intertidal oyster reefs and aquaculture structures increased habitat complexity, attracted similar assemblages of motile macrofauna and supported an increased species abundance, biomass and species richness compared to sand flats. Based on these metrics, oyster aquaculture rack and bag structures are comparable habitat to intertidal oyster reef habitat in Delaware Bay.

Although mariculture operations may expand the production of seafood without additional exploitation of wild populations, they still depend upon and affect natural ecosystems and ecosystem services. Every additional animal has an incremental effect arising from food extraction and waste excretion. Increasing domestic seafood production in the United States in an environmentally and socially responsible way will likely require the use of policy tools, such as best management practices (BMPs) and performance standards. BMPs represent one approach to protecting against undesirable consequences of mariculture. An alternative approach to voluntary or mandatory BMPs is the establishment of performance standards for mariculture. Variability in environmental conditions makes it difficult to develop BMPs that are sufficiently flexible and adaptable to protect ecosystem integrity across a broad range of locations and conditions. An alternative that measures performance in sustaining key indicators of ecosystem state and function may be more effective. Because BMPs address mariculture methods rather than monitoring actual ecosystem responses, they do not guarantee that detrimental ecosystem impacts will be controlled or that unacceptable impact will be avoided. Ecosystem Concepts for Sustainable Bivalve Mariculture finds that while performance standards can be applied for some broad ecosystem indicators, BMPs may be more appropriate for addressing parameters that change from site to site, such as the species being cultured, different culture methods, and various environmental conditions. This book takes an in-depth look at the environmental, social, and economic issues to present recommendations for sustainable bivalve mariculture.
