Book excerpt: The FAO Production Yearbook is a compilation of statistical data on basic agricultural products for all countries and territories of the world. This yearbook includes data series on area, yield and production of crops; on livestock numbers and products; and on population, land use, irrigation and farm machinery, for the years 1999-2001. It also gives total and per caput index numbers that highlight trends in food and agricultural production across all countries and continents for the years 1991-2002. Statistical information is mainly based on data provided by countries through electronic media, questionnaires of the FAO Statistics Division or offical statistics publications. In the absence of official data, FAO makes estimates based on the best information available. The data are disseminated to serve the needs of scholars, economists, policy-makers, decision-makers as well as industry professionals and those professionals in the capital markets. - L'Annuaire FAO de la production est un recueil de donnees statistiques sur les produits agricoles de base pour tous les pays et territoires du monde. Available in PDF, EPUB and Kindle. Book excerpt: Food Safety Management: A Practical Guide for the Food Industry, Second Edition continues to present a comprehensive, integrated and practical approach to the management of food safety throughout the production chain. While many books address specific aspects of food safety, no other book guides you through the various risks associated with each sector of the production process or alerts you to the measures needed to mitigate those risks. This new edition provides practical examples of incidents and their root causes, highlighting pitfalls in food safety management and providing key insights into different means for avoiding them. Each section addresses its subject in terms of relevance and application to food safety and, where applicable, spoilage. The book covers all types of risks (e.g., microbial, chemical, physical) associated with each step of the food chain, making it an ideal resource. Addresses risks and controls at various stages of the food supply chain based on food type, including a generic HACCP study and new information on FSMA Covers the latest emerging technologies for ensuring food safety Includes observations on what works and what doesn't on issues in food safety management Provides practical guidelines for the implementation of elements of the food safety assurance system Explains the role of different stakeholders of the food supply

Book excerpt: Unless a food is grossly contaminated, consumers are unable to detect through sight or smell the presence of low levels of toxic chemicals in their foods. Furthermore, the toxic effects of exposure to low levels of chemicals are often manifested slowly, sometimes for decades, as in the case of cancer or organ failure. As a result, safeguarding food from such hazards requires the constant monitoring of the food supply using sophisticated laboratory analysis. While the food industry bears the primary responsibility for assuring the safety of its products, the overall protection of people’s diets from chemical hazards must be considered one of the most important public health functions of any government. Unfortunately, many countries do not have sufficient capability and capacity to monitor the exposure of their populations to many potentially toxic chemicals that could be present in food and drinking water. Without such monitoring, public health authorities in many countries are not able to identify and respond to problems posed by toxic chemicals, which may harm their population and undermine consumer confidence in the safety of the food supply. From a trade perspective, those countries that cannot demonstrate that the food they produce is free of potentially hazardous chemicals will be greatly disadvantaged or even subject to sanctions in the international marketplace. The goal of a total diet study (TDS) is to provide basic information on the levels and trends of exposure to chemicals in foods as consumed by the population. In other words, foods are processed and prepared as typical for a country before they are analyzed in order to better represent actual dietary intakes. Total diet studies have been used to assess the safe use of agricultural chemicals (e.g., pesticides, antibiotics), food additives (e.g., preservatives, sweetening agents), environmental contaminants (e.g., lead, mercury, arsenic, cadmium, PCBs, dioxins), processing contaminants (e.g., acrylamide, polycyclic aromatic hydrocarbons, chloropropanols), and natural contaminants (e.g., aflatoxin, patulin, other mycotoxins) by determining whether dietary exposure to these chemicals are within acceptable limits. Total diet studies can also be applied to certain nutrients where the goal is to assure intakes are not only below safe upper limits, but also above levels deemed necessary to maintain good health. International and national organizations, such as the World Health Organization, the European Food Safety Agency and the US Food and Drug Administration recognize the TDS approach as one of the most cost-effective means of protecting consumers from chemicals in food, for providing essential information for managing food safety, including food standards, and for setting priorities for further investment and study. Total Diet Studies introduces the TDS concept to a wider audience and presents the various steps in the planning and implementation of a TDS. It illustrates how TDSs are being used to protect public health from chemicals in the food supply in many developed and developing countries. The book also examines some of the applications of TDSs to specific chemicals, including contaminants and nutrients.

Available in PDF, EPUB and Kindle. Book excerpt: Assessment of food safety management systems is a verification activity with the objective of evaluating the compliance with set standards. While it cannot be relied upon for ensuring safety, it is important for verifying that stakeholders comply with safety and regulatory requirements. Assessment can be carried out by authorities or by the private sector itself. It can be comprehensive and cover the assessment of the entire food safety management system, or be partial and limited to some elements of the food safety management system, operations or products. This will depend on the purpose of the assessment. The validity of the assessment depends on a number of factors, in particular the competence of assessors. The frequency and scope must be based on the level of risk presented by the operation. Among different factors, the previous records of compliance are important criteria to be considered.
