Book excerpt: Peanuts are commonly infected with yellow molds or Aspergillus flavus during pre- and post-harvest stages, storage and transportation resulting in aflatoxin contamination. Consumption of aflatoxin contaminated peanuts causes health hazards like; liver cancer, stunted growth and mental retardation, immune system suppression, allergies, and death in both humans and livestock. Recommended agronomic practices, good pre and post-harvest practices, chemical and biological control have been emphasized to overcome the above hazards. Adopting resistant varieties against Aspergillus flavus and aflatoxin contamination is considered as a cost effective strategy. Evaluation of different peanut varieties to A. flavus infection, determination of predominant Aspergillus species and levels of aflatoxin contamination in peanut varieties were the objectives of this study. Results showed that none of the varieties was immune to A. flavus infection. Differences were observed in the level of mycelial growth under different treatments. The Aspergillus species isolated from peanut kernels were; A. niger, A. flavus, A. nidulans and A. fumigatus. The aflatoxin contamination levels ranged from 6 to 27 ppb.

Aflatoxin contamination of peanut is a serious worldwide problem. Aflatoxin resistant cultivars should be a component of an integrated program of aflatoxin management. Peanut genotypes with resistance to in vitro seed colonization (IVSCAF), field seed colonization (FSCAF) and preharvest aflatoxin contamination (PAC) have been reported, but no germplasm highly resistant to aflatoxin production has been found in cultivated peanut. A technique was developed to identify genotypes with resistance to aflatoxin production when subjected to post-harvest conditions conducive to fungal growth and aflatoxin synthesis. This technique provides environmental control and generally results in a low coefficient of variation in the data. Using this technique, the effect of the high-oleate trait on aflatoxin production was tested by comparing normal oleic lines with high-oleic backcross-derived lines. High-oleate peanuts supported more aflatoxin than normaloleate lines, but the magnitude of the difference varied with background genotype. To determine if linoleate concentration in seed oil could be used to predict levels of aflatoxin production, seeds of genotypes representing a range of linoleate concentration were tested. Low-linoleate lines consistently contained more aflatoxin, while normal- to highlinoleate lines contained variable amounts of aflatoxin. Although fatty acid profiles accounted for significant portions of the genetic variation, fatty acid concentration was not a reliable predictor of aflatoxin production, especially for lines in the normal range for oleate and linoleate. The same technique was used to evaluate seven accessions of A. cardenasii Krapov. and W.C. Gregory, 29 accessions of A. duranensis Krapov. and W.C. Gregory, and 17 interspecific tetraploid lines derived from A. cardenasii. The two diploid wild species.

We emphasise the fungi which cause food spoilage, but also devote space to the fungi commonly encountered in foods at harvest, and in the food factory. As far as possible, we have kept the text simple, although the need for clarity in the descriptions has necessitated the use of some specialised mycological terms. The identification keys have been designed for use by microbiologists with little or no prior knowledge of mycology. For identification to genus level, they are based primarily on the cultural and physiological characteristics of fungi grown under a standardised set of conditions. The microscopic features of the various fungi become more important when identifying isolates at the species level. Nearly all of the species treated have been illustrated with colony photographs, together with photomicrographs or line drawings. The photomicrographs were taken using a Zeiss WL microscope fitted with Nomarski interference contrast optics. We are indebted to Mr W. Rushton and Ms L. The differences in environmental conditions (temperature, light, rainfall etc. ) and in exposed cultivated plants (type of cereals, cultivars etc. ) in the distinct European countries have significantly influenced the distribution of specific toxigenic fungi and related mycotoxicological problems. In addition, biogeographically structured lineages within some important toxigenic fungi have been recently discovered, of reproductive isolation. Transglobal showing a long evolutionary history transposition of plant products seems to have significantly contributed to the spreading of toxigenic species and lineages worldwide. Therefore, the migration of agriculturally important toxigenic fungi generated by trade exchanges may represent a major source of inoculum for new plant diseases in Europe and for a wider genetic diversity of local populations. It was our goal to provide the reader with an update of researches and surveys on the natural occurrence of toxigenic fungi and mycotoxins performed at a European level during the last 5-10 years. The editors are extremely grateful to the EU-COST-835 "Agriculturally important toxigenic fungi" for the financial support that allowed a number of European scientists to meet several times over the past five years to collaborate and exchange information about research advances on toxigenic fungi and mycotoxins.
