Available in PDF, EPUB and Kindle. Book excerpt: There’s never been a book about food like Let’s Eat France! A book that feels literally larger than life, it is a feast for food lovers and Francophiles, combining the completist virtues of an encyclopedia and the obsessive visual pleasures of infographics with an enthusiast’s unbridled joy. Here are classic recipes, including how to make a pot-au-feu, eight essential composed salads, pâté en croûte, blanquette de veau, choucroute, and the best ratatouille. Profiles of French food icons like Colette and Curnonsky, Brillat-Savarin and Bocuse, the Troigros dynasty and Victor Hugo. A region-by-region index of each area’s famed cheeses, charcuterie, and recipes. Poster-size guides to the breads of France, the wines of France, the oysters of France—even the frites of France. You’ll meet endive, the belle of the north; discover the croissant timeline; understand the art of tartare; find a chart of wine bottle sizes, from the tiny split to the Nebuchadnezzar (the equivalent of 20 standard bottles); and follow the family tree of French sauces. Adding to the overall delight of the book is the random arrangement of its content (a tutorial on mayonnaise is next to a list of places where Balzac ate), making each page a found treasure. It’s a book you’ll open anywhere—and never want to close.

Book excerpt: The 1855 Bordeaux Classification has been a fixture of the wine world for almost 150 years, yet the origin of the system and the thinking behind it have never been thoroughly researched and presented in detail - until now. How was the 1855 classification drafted? Who was responsible? What was the rationale for the cru classe rating, and what criteria were used to determine inclusion and rankng? 1855: A History of the Bordeaux Classification answers these central questions and more. Drawing on primary source material gleaned through professional organizations, municipal archives, and author visits to each Medoc, Graves, and Sauternes propertry listed in the 1855 classification, this book demystifies every key aspect of the subject. Appendices give readers direct access to documents from the archives of the Bordeaux Chamber of Commerce, selected Bordeaux wine price quotations, and other valuable information.

Available in PDF, EPUB and Kindle. Book excerpt: In the first decade of the twentieth century, the sleepy vineyard towns of the Aude department of southern France exploded with strikes and protests. Agricultural workers joined labor unions, the Socialist party established a base among peasant vinegrowers, and the largest peasant uprising of twentieth-century France, the great vinegrowers' revolt of 1907, shook the entire south with massive demonstrations. In this study, Laura Levine Frader explains how left-wing politics and labor radicalism in the Aude emerged from the economic and social transformation of rural society between 1850 and 1914. She describes the formation of an agricultural wage-earning class, and discusses how socialism and a revolutionary syndicalist labor movement together forged working-class identity. Frader's focus on the making of the rural proletariat takes the study of class formation out of the towns and cities and into the countryside. Frader emphasizes the complexity of social structure and political life in the Aude, describing the interaction of productive relations, the gender division of labor, community solidarities, and class alliances. Her analysis raises questions about the applicability of an urban, industrial model of class formation to rural society. This study will be of interest to French social historians, agricultural historians, and those interested in the relationship between capitalism, class formation, and labor militancy.

Book excerpt: Together, Paris-based artists Léonore Bonaccini and Xavier Fourt make up the artist duo Bureau d'Etudes. For the past several years, this French group has been producing cartographies of contemporary political, social and economic systems which allow people to empower and reposition themselves. Revealing what normally remains invisible, often in the shape of large-sized banners, and contextualizing apparently separate elements within another framework, these visualizations of people's interests and relations re-symbolize and actualize an order concealed and unknown.
