Book Synopsis Quality and Grading of Carcasses of Meat Animals by : S. Morgan Jones
Download or read book Quality and Grading of Carcasses of Meat Animals written by S. Morgan Jones and published by CRC Press. This book was released on 2020-07-24 with total page 241 pages. Available in PDF, EPUB and Kindle. Book excerpt: Three main factors affect the quality and composition of meat in farm animals. Production conditions determine the composition of the meat, while marketing and postmortem periods have a major bearing on the visual appearance and ultimate eating experience for the consumer. It is often difficult to compare research results from different countries since meat quality is assessed by a wide variety of procedures. Quality and Grading of Carcasses of Meat Animals reviews the development of commercial grading or classification schemes on a world-wide basis, and it provides a broad outline of the most common subjective and objective procedures for the assessment of meat quality. The book provides reviews on: Ante- and post-mortem effects on meat quality Reducing fatness in meat animals Prediction of carcass composition and meat quality World carcass and grading systems Electronic identification of animals

This book was released on 2019 with total page 0 pages. Available in PDF, EPUB and Kindle. Book excerpt: The current concern regarding how animals are raised, which kind of feedstuffs were fed, and the management activities employed in the livestock segment system is increasing, primarily due to the public and/or customer opinion. Therefore, a positive pressure is being placed in the industry/production to be more effective in communicating these processes and to explain what indeed occurs during the animal,Äôs productive life, from birth to slaughter. Hence, it is imperative to explain what type of situations animals face during their productive lives and how these might impact productive, health, and the quality of the final product sold at the supermarket. Additionally, it is important to understand that technologies have been developed that could mitigate some of these stress-related losses (health and productive), as well as to improve meat quality traits and overall customer eating experience.
Book Synopsis INRA feeding system for ruminants by : INRA
Download or read book INRA feeding system for ruminants written by INRA and published by BRILL. This book was released on 2023-11-27 with total page 639 pages. Available in PDF, EPUB and Kindle. Book excerpt: The INRA Feeding System for Ruminants has been renewed to better address emerging challenges for animal nutrition: prevision of productive responses, product quality, animal health and emissions to the environment, in a larger extent of breeding contexts. The new system is mainly built from meta-analyses of large data bases, and modelling. The dietary supply model accounts for digestive interactions and flows of individual nutrients, so that feed values depend on the final ration. Animal requirements account for variability in metabolic efficiency. Various productive and non-productive animal responses to diets are quantified. This book presents the whole system for dairy and meat, large and small ruminant production, including specificities for tropical and Mediterranean areas. The first two sections present biological concepts and equations (with their field of application and statistical accuracy) used to predict intake (including at grazing) and nutrient supply (Section 1), animal’s requirements and multiple responses to diets (Section 2). They apply to net energy, metabolisable protein and amino acids, water, minerals and vitamins. Section 3 presents the use of concepts and equations in rationing with two purposes: (1) diet calculation for a given performance objective; and (2) prediction of the multiple responses of animal to diet changes. Section 4 displays the tables of feed values, and their prevision. All the equations and concepts are embedded in the fifth version of INRAtion® software for practical use.
Book Synopsis The Problem of Dark-Cutting in Beef by : D.E. Hood
Download or read book The Problem of Dark-Cutting in Beef written by D.E. Hood and published by Springer Science & Business Media. This book was released on 2012-12-06 with total page 505 pages. Available in PDF, EPUB and Kindle. Book excerpt: This publication contains the proceedings of a seminar 'The problems of dark-cutting in beef' held by the Commission of the European Communities (CEC) at the Commission in Brussels on 7 and 8 October 1980. As part of the CEC programme of coordination of agricultural research, this meeting was organised in the framework of the beef and animal welfare activities by Dr. D.E. Hood and Dr. P.V. Tarrant, Meat Research Department, An Faras Taluntais. Dunsinea, Castleknock, Dublin, Ireland. The proceedings, edited by the organisers assisted by Janssen Services, 33a, High Street, Chislehurst, Kent, UK, provide an authoritative text-book on this important aspect of meat technology. Reduction of pre-slaughter stress and improvement in carcass and meat quality is becoming increasingly important in the international meat trade. This results in particular from growing consumer concern about the welfare of meat animals during the pre-slaughter period and from specific meat packaging and marketing requirements. Technical development of the beef processing industry is dependent on a uniformly high level of meat quality in the raw material.
