Book excerpt: A series of five trials were conducted to evaluate grain processing, distiller's grains inclusion in finishing diets, interactions between distiller's grains and dry-rolled corn (DRC) or steam-flaked corn (SFC), efficacy of removing roughage in the presence of distiller's grains and the digestibility of distiller's grains in steam-flaked and dry-rolled corn diets. The first trial was designed to determine the optimum flake density of SFC in beef finishing diets. Diets consisted of corn flaked to densities of 360, 411, or 462 g/L. Observed improvements in mill production would support increasing flake density; however numerical decreases in animal performance offset economic benefits of increased productivity. The second trial was conducted to evaluate optimum levels of sorghum wet distiller's grains in finishing diets. Crossbred yearling steers were fed diets containing DRC or SFC and levels of distiller's grains were 0, 10, 20, or 30% of diet dry matter. Distiller's grains can effectively replaced a portion of the corn in finishing diets, but their nutritional value was greater in DRC diets than in SFC diets. In trial 3, crossbred heifers were fed diets containing SFC with 0% DDG and 15% corn silage (CS), 25% DDG and 15% CS, or 25% DDG and 5% CS. In trial 4, crossbreed heifers were fed diets similar containing DRC or SFC with 0% DDG and 15% CS, 25% DDG and 15% CS, or 25% DDG and 5% CS. Results indicate that roughage levels can be reduced in feedlot diets containing DDG with no adverse effects on performance or carcass quality. The fifth trial was a metabolism study conducted to evaluate the digestibility of DDG in beef cattle. Treatments consisted of DRC with 0% DDG, DRC with 25% DDG, SFC with 0% DDG, and SFC with 25% DDG. There were no significant grain processing by distiller's grain interactions observed in main effects. In conclusion optimum flake density was 360 g/L, feeding distiller's grains has a greater value in DRC diets vs. SFC diets, roughage level and type are important in formulating finishing diets, roughage can be reduced when feeding distiller's grains, and ruminal ammonia, and pH are decreased and ruminal lactate is increased when feeding DDG and SFC.

The study was a randomized complete block design using pen as the experimental unit. Steers (n = 455; 373 ± 15.5 kg) were randomly allocated to 48 pens (12 blocks, 4 pens/block) and transitioned over 20 d to 1 of 4 steam-flaked corn-based dietary treatments containing: no byproducts (CON), 20% WDGS (WDGS), 20% SB (SB), or 20% SB and 10% WDGS (COMBO). Within each pen, 2 steers were randomly selected to receive an indwelling ruminal pH bolus to quantify pH of the rumen and a 3-axis accelerometer tag to measure rumination for the first 92 d of the study. Diet samples were collected weekly to determine particle size, NDF concentration, and physically effective fiber (peNDF). Depending on the plant, WDG and DS will be combined to produce wet distillers grains plus solubles (WDGS). Some plants will partially dry WDGS and market modified distillers grains plus solubles (MDGS), or other plants will completely dry WDGS to produce dried distillers grains plus solubles (DDGS). These products have been shown to contain greater feeding values than the corn it replaces in finishing diets. However, as drying intensity of distillers grains plus solubles (DGS) increases, the feeding value relative to corn decreases. Three finishing experiments and two metabolism experiments were conducted to evaluate the effect drying WDGS has on finishing cattle performance and carcass characteristics and the effects on nutrient digestibility. Diets containing DGS had greater ADG and were more efficient than the corn-based control. As a result, cattle fed DGS had heavier HCW and greater 12th rib fat thickness at harvest. Using the G:F values, all types of DGS regardless of moisture content had greater feeding values than the corn it replaced. Additionally, WDGS had greater feeding values than MDGS and DDGS, and MDGS had a greater feeding value than DDGS. Although not significant, diets containing WDGS had numerically greater NDF digestibility than diets containing DDGS. Organic matter digestibility was improved for WDGS compared to DDGS. Completely and partially drying WDGS reduces the feeding value in finishing diets and reduces OM digestibility.

Also, limited data are available for feeding different levels of beet pulp in corn based adaptation and finishing diets. Lastly, the relationship between dietary fiber and sulfur (rumen degradable; RDS and rumen undegradable) and their impact on feedlot health is not well understood. Therefore, our objectives were to 1) determine the effects of feeding different ratios of DRC and SFC in diets that contain 35% (DM) WDGS on finishing performance and carcass characteristics 2) evaluate the effects of feeding different levels of beet pulp in combination with DRC or SFC, 3) compare grain adaption programs using beet pulp to a traditional grain adaption program with alfalfa hay on finishing performance and carcass merit and 4) determine the relationship between dietary S (rumen degradable and rumen undegradable), neutral detergent fiber and polioencephalomalacia (PEM). A WDGS x corn processing ratio interaction (P = 0.03) was observed for G:F. Cattle fed diets containing no WDGS with SFC as the sole source of corn had 11% greater G:F (0.189, P 0.01) compared to steers fed all DRC diets with no WDGS (0.170). As SFC replaced DRC in diets containing no WDGS, G:F increased quadratically (P 0.01). A positive associative effect in G:F was observed as SFC replaced DRC in diets with 0% WDGS; however G:F was not impacted by corn processing in diets containing 35% WDGS. Fractionation of the corn kernel pre- and post-fermentation has changed the composition of DGS and allowed for the production of other feed byproducts over time. The use of fractionated DGS and other feed byproducts from the ethanol industry has not been heavily researched in beef cattle diets. Three experiments were conducted to evaluate the effect of feeding high protein distillers grains (HiPro DDG) and corn bran plus solubles (Bran + Solubles) in beef cattle diets. Experiment 1 evaluated the effect of byproduct type on finishing performance and carcass characteristics. Experiment 2 evaluated the effect of byproduct type on nutrient digestibility, ruminal pH, ruminal VFA production, and in vitro gas production. Byproducts replaced corn at 40% of diet DM in Exp. 1. Experiment 3 compared feeding Bran + Solubles to wet DGS at 20 and 40% of diet DM compared to a corn control. In Exp. 2, Feeding HiPro DDG or Bran + Solubles resulted in decreased digestibility compared to corn or traditional wet and dry DGS, but increased energy intake. Traditional wet and dry DGS also resulted in decreased digestibility while energy intake was increased. Volatile fatty acid profiles and pH parameters were not different across treatments. Feeding HiPro DDG and Bran + Solubles improved gains and feed efficiency compared to traditional dry or wet DGS and corn. Compared to wet DGS, Bran + Solubles resulted in similar performance and carcass characteristics. Increased inclusion of both byproducts resulted in a linear increase in carcass weight. Overall, nutrient digestibility for HiPro DDG or Bran + Solubles is similar to traditional wet or dry DGS while performance was increased.

An interaction was observed within CGF for discoloration, with SS increasing discoloration 30%; but no differences between SS or NS from DGF cattle. Supplementing with DGS did not further reduce the color stability of retail beef of DGF finished cattle; however, DGS supplementation prior to finishing can affect beef quality when DGS are not included in the finishing diet. In the second study, crossbred steers (n = 336) were utilized in a 2 x 3 factorial evaluating duration of OmniGen – AF supplementation (0, 28, or 56 d) at 4 g / 45.5 kg BW and supplementation of ractopamine hydrochloride (RAC) at 300 mg/ steer daily for the last 28 days of finishing or no supplementation. No Omnigen – AF by RAC interaction or OmniGen –AF effects were observed for any feedlot performance or carcass characteristics measured. Supplementing RAC increased ADG 0.5 kg, increased FBW 10.0 kg, and increased LM area 0.9 cm2 compared to NORAC.

Results indicated no interaction between levels of DDGS and roughage source. Heifers fed DDGS as a partial replacement for steam-flaked corn had similar growth performance and carcass merit compared to heifers fed diets without DDGS. Corn silage and alfalfa hay were comparable roughages when a portion of steam-flaked corn was replaced with DDGS. The second trial was a companion metabolism study in which ruminal fermentation characteristics and diet digestibility were examined in 12 cannulated Holstein steers fed steam-flaked corn finishing diets with or without DDGS, using alfalfa hay or corn silage as roughage sources. Diets were similar to those fed in the performance study and consisted of steam-flaked corn with 0 or 25% DDGS (DM basis) and 6% AH or 10% CS (DM basis). Feeding DDGS decreased ruminal pH and ruminal ammonia concentrations, and digestion of DM and OM were less compared to diets without DDGS. The decrease in digestibility was largely attributable to poorer digestion of CP and, to a lesser extent, a reduction in starch digestion. Book excerpt: Wet distiller's grains with solubles are the most common feedstuff generated by the ethanol industry, and this feedstuff has been utilized by the feedlot industry. Exploration of the effect of dietary distiller's inclusion on the form and quantity of protein or nitrogen (N) has received little attention. Assessment of degradable N needs in diets containing wet distiller's grains with solubles (WDGS) is needed to aid the cattle feeding industry in managing feed costs and potential environmental issues. In Exp. 1, 525 yearling steers (initial weight = 373 ±13 kg) received treatments in a 2 x 3 1 factorial. Factors included corn WDGS (15 or 30 percent of DM) and non-protein N (NPN; 0, 1.5, or 3.0 percent of DM) from urea. The control diet without corn WDGS contained 3.0 percent NPN (1.06 percent urea) and cottonseed meal. Overall gain efficiency among steers fed 15 percent corn WDGS was greatest for 1.5 percent NPN and least for 0 percent NPN (P = 0.07, quadratic), whereas gain efficiency decreased linearly (P 0.09) as NPN increased in the 30 percent WDGS. Dressing percent was greater (P 0.01) for the control diet than for 15 percent or 30 percent WDGS. In Exp. 2, 296 steer calves (initial BW = 344 ±12 kg) were adapted to a common finishing diet, blocked by BW, and assigned to treatments. Experimental diets included a control diet without WDGS (contained 3 percent NPN from urea, and cottonseed meal) and 15 percent WDGS with either 1.50, 2.25, or 3.00 percent NPN (0.52, 0.78, and 1.04 percent urea, respectively, on a DM basis). Overall gain efficiency on either a live or adjusted basis was not different among treatments (P 0.15). Dietary NPN concentration did not influence growth performance (P 0.21). Results suggest that optimum performance for cattle fed 15 percent WDGS occurred when the diet contained between 1.5 percent and 2.25 percent NPN. However, removing all supplemental NPN was necessary to support optimum performance in diets containing 30 percent WCDG.
