Book excerpt: This dissertation includes studies on the effect of dietary CLA on the growth, fat accumulation and fatty acid status of chicken, and chicken meat quality as influenced by irradiation. Results showed that dietary CLA did not have significant effects on the growth rate and feed efficiency in chicken. And high levels of dietary CLA slightly reduced the whole body fat content. High ratio of dietary CLA can incorporate into chicken meat and egg yolk. Dietary CLA reduced the concentration of monounsaturated fatty acids. The concentration of polyunsaturated fatty acids, including arachidonic acid, linolenic acid and linolenic acid, also reduced as the dietary CLA level increased. However, when the dietary level of linolenic acid in diet was high, dietary CLA stimulated the synthesis of DHA and EPA, which might directly relate to the biological effects of CLA. High level of dietary CLA influenced the quality of meat, which was slightly harder and drier compared to the control meat. Dietary CLA significantly improved the oxidative stability of chicken meat. The reason for the improved oxidative and color stability of meat patties during storage should be due to the reduced unsaturated fatty acid content in chicken muscles, which improved lipid and color stability and reduced volatile production in both irradiated and nonirradiated meat during storage. Irradiation greatly increased the volatile production and induced a metal-like off-odor in chicken rolls, and dietary CLA had synergistic effect on this metal-like off-odor. Irradiation also increased the redness of chicken rolls. Consumers had a preference for the color of irradiated chicken rolls, while their reactions to the flavor of irradiated chicken rolls were quite negative.

Book excerpt: In the presence of internal or external stressors, the body requires sources of energy that aide cells to combat inflammation. Fatty acids are an important source of energy and are vital components of cell membranes. Dietary fatty acids (n-6 and n-3) are of importance in immune function because they are precursors to metabolites that are potent mediators of inflammation. Poultry diets are high in n-6 fatty acids, which exert pro-inflammatory effects, and low in n-3 fatty acids, which tend to be less inflammatory. Delayed access to feed after hatching has been reported to impact the development of organs associated with immunity. Based on this information, two experiments were conducted in broiler chickens to determine the effect of dietary polyunsaturated fatty acid (PUFA) and the influence of time of feeding on bird performance, tissue lipid status, immune responses and expression of cyclooxygenase 2 (COX-2) upon challenge. In experiment 1, birds were fed diets that contained 3.5% oxidized yellow grease (low n-3) or 3.5% canola oil (high n-3). Birds were fed early (5 hrs post-hatch) or late (24 hrs post-hatch). Intramuscular injection of lipopolysaccharide (LPS) or phosphate buffered saline (control) was used as the immune challenge. Feeding high n-3 diets resulted in an increase in n-3 fatty acids in the liver in all treatment groups upon LPS challenge (P0.05). LPS injection led to a decrease in total n-6 fatty acids in the liver when compared with control birds (P0.05) fed early high n-3 and late low n-3. However, in spleen tissue, upon LPS challenge, increase in total n-3 fatty acids was observed only in birds fed early high n-3 and birds fed late high n-3. Plasma non-esterified fatty acids were lowest in high n-3 birds fed early (P0.05). The spleen tissue total fat content was lowest in early high and late high n-3 birds (P0.05). In experiment I, forty day-old broiler chicks were fed diets containing 5% of either animal fat + conjugated linoleic acid (CLA) (Diet I), sunflower oil (Diet II), flax oil (Diet III) or fish oil (Diet IV). No significant differences (P>0.05) were observed between the live weight of birds. The liver tissue total fat content was lower (P0.05) in treatment I and II. The fatty acid composition of breast and thigh muscle, liver, heart, pericardial fat, plasma, splenocytes and gut associated lymphoid tissue differed (P0.05) between treatments. The thiobarbituric acid reactive substances (TBARS) of breast and thigh muscle, liver and heart tissue were lower (P0.05) in Diet I fed birds. Serum antibody activity was decreased (P0.05) in Diet II fed birds. The first experiment was performed to determine the effects of dietary conjugated linoleic acid (CLA) and omega-3 fatty acid combination on the omega-6 fatty acid accumulation in broiler chicken breast and thigh meat. Eight broilers from each treatment were processed at 4 and 6 weeks of age, respectively. Regarding the diets containing five different fat sources, broiler chickens fed CLA and fish oil diet had a lower C20:4 (arachidonic acid, AA, n-6) deposition but showed a higher n-3/n-6 ratio in breast and thigh meat than those fed a flaxseed oil diet and CLA and flaxseed oil diet (P 0.05). The C20:4 and n-3/n-6 ratio of breast and thigh samples from fish oil diet was similar to those of the conjugated linoleic acid and fish oil combination diet (P 0.05).
