Book excerpt: Com o objetivo de avaliar os efeitos de diferentes quantidades de nitrogenio e agua sobre o comportamento agronomico e industrial de trigo, utilizaram-se quatro doses de nitrogenio (0, 40, 80 e 120 kg/ha), duas cultivares de trigo (BR 18-terena, de qualidade superior e a BR 36-Ianomai, de qualidade intermediaria) e tres laminas d'agua (276, 361 e 458 mm). O nitrogenio, na forma de ureia, foi aplicado 1/3 na semeadura e o restante no perfilhamento. O manejo da irrigacao baseou-se na evaporacao do tanque classe A, determinando-a a cada 30 mm de lamina evaporada. O delineamento foi o de blocos ao acaso em parcelas subdivididas, em quatro repeticoes, sendo as doses colocadas na parcela, as cultivares na subparcela e as laminas na subparcela. A semeadura foi realizada em 15 de junho de 1996, em subparcelas de 15 linhas de 5,0 m de comprimento, espacadas de 0,20 m entre si. As quantidade de agua foram aplicadas atraves do sistema "line source" que produz uma irrigacao diferencial decrscente do centro para as extremidades. As caracteristicas foram divididas em dois grupos: 1-as de natureza agronomica (altura da planta, comprimento da espiga, massa de mil graos, numero de espiguetas ferteis por espiga, numero de espigas por m2, numero de graos por espiga, numero de graos por m2 e rendimento de graos; 2;as de natureza indutsrial (peso do hectolitro, capacidade de extracao de farinha, teor de proteina no graos, microssedimentacao, alveografia e numero de queda. Dentre os componentes do rendimento de graos, o numero de espiguetas por espiga, o numero de graos por espiga, o numero de espigas por m2 e o numero de graos por m2, foram os mais sensiveis as quantidades de agua e de nitrogenio fornecidas. O rendimento de graos foi mais dependente da quantidade de agua do que da quantidade de nitrogenio, e as respostas variaram com as cultivares utilizadas. A cultivar BR 36-Ianomami respondeu com aumento de 55,09 kg de graos a cada 20 kg/ha de N aplicados, quando a lamina d'agua passou de 276 para 361 mm e de 63,31 kg de graos/20 kg de N, quando a lamina passou de 361 para 458mm. A cultivar BR 18-Terena apresentou melhor comportamento, com aumento medio de 67,2 kg de graos para cada 20 kg/ha de N, quando a quantidade de agua passou de 276 e de 76,7 kg/ha de graos/20 kg/ha de N, quando a quantidade de agua variou de 361 a 458. As carateristicas fisico-quimicas e reologicas mais influenciadas positivamente pela adubacao nitrogenada foram o teor proteico e a forca de gluten. A variacao na quantidade de agua exerceu influencia nas caracteristicas determinantes da qualidade industrial, com excecao entre tenacidade e extensibilidade (P/L), indicando, portanto, ser a agua mais importante do que o nitrogenio na producao de materia-prima para panificacao. As menores quantidades de agua alteraram as carecteristicas avalidas no sentido da melhoria da qualidade de panificacao. Apesar das alteracoes verificadas nos valores determinantes das caracteristcas fisico-quimicas e reologicas, com a variacao na quantidade de agua fornecida, elas nao foram suficientes para alterar a classificacao comercial das cultivares utilizadas, indicando ser possivel explorar ao maximo o rendimento de graos, sem prejuizo da qualidade de panificacao. Desta forma, o uso de 120 kg/ha de N e 458 mm de agua promoveram os maiores rendimentos de graos, sem prejuizo da classificacao comercial das cultivares utilizadas.
