Book excerpt: Experiment 1 used a total of 1,200 pigs to determine the effects of added Val, Ile, and Trp in high Leu on growing-finishing pig growth performance and carcass characteristics in order to validate a prediction model. Experiments 2 and 3 used a total of 3,888 pigs to determine the effects of manganese source and level on growing-finishing pigs growth performance and carcass characteristics. Experiment 4 used a total of 1,944 pigs to determine the effects of increasing added xylanase in nutrient adequate diets on growing-finishing pigs growth performance and carcass characteristics. Experiment 1 determined that increasing Val or Ile in high Lys-HCl-DDGS-based diets improved growth performance and final BW compared with pigs fed diets containing high levels of Lys-HCl without added Val and Ile. The addition of Trp alone could not overcome the negative effects of growth performance of pigs fed high Leu diets. These results demonstrate that negative effects of high Leu concentrations in corn-DDGS-based diets can be reversed by increasing the ratios of Val and Ile to Lys. In Exp. 2 and 3, growth performance was improved when 8 and 32 mg/kg of Mn is supplemented compared to 16 mg/kg and when pharmacological levels of Cu are supplemented; pigs fed Mn hydroxychloride had improved growth performance. Also, as Mn concentration in the diet increased, regardless of source, total Mn concentration in the liver increased but increased less for pigs fed Mn hydroxychloride. In Exp. 4, when xylanase was added to nutrient adequate diets, there was improved carcass yield when intermediate levels were fed, however, there was no impact on growth performance or mortality.

The first study evaluated the combined effect of dietary level of DDGS and HP-DDG on the growth performance of wean-finish pigs and carcass and pork quality characteristics. This study demonstrated that DDGS can be included at up to 30% in diets (without HP-DDG) without compromising growth performance of wean-to-finish pigs. However, growth performance was increasingly compromised at higher inclusion levels of both co-products and belly firmness was negatively affected by increasing levels of both DDGS and HP-DDG. A second experiment was designed to define the minimum CP level and whether non-essential amino acids become limiting in low crude protein diets for late finishing pigs. The results of this study demonstrated that late finishing pigs can be fed diets with 9.76% crude protein level supplemented with 0.32 % L-Lys HCL and other essential amino acids without affecting growth rate and that non-essential amino acids were not limiting in the low crude protein diets evaluated. A third study was designed to recreate the negative effects on growth performance of feeding diets with 30% HP-DDG inclusion level and to test if the negative effect of feeding high HP-DDG levels on growth performance can be reproduced by adding excess branched chain amino acids (leucine, isoleucine, and valine) to standard corn-soybean meal based diet. The results show that the reduction in the growth rates of growing pigs fed diets with 30% HP-DDG inclusion levels may be due to the dietary excesses of leucine present in diets with HP-DDG at 30% inclusion levels. The same effect was not present in finishing pigs. In general, growth performance and belly quality are compromised at higher inclusion levels of both HP-DDG and DDGS. The results of the last studies indicate that leucine level may play an important role on the reduction of the growth performance of pigs fed 30% HP-DDG inclusion levels.

Book excerpt: This thesis involves two studies to determine the effects of standardized ileal digestible (SID) lysine (Lys) requirements of growing-finishing pigs from 18 to 128 kg of body weight (BW) as well as evaluating the effects of adding potassium bicarbonate (KHCO3) to diets with high or low crystalline lysine (L-Lys HCl) to influence dietary cation-anion difference (DCAD). Five experiments involving 2,903 pigs were conducted to determine the SID Lys requirement for maximum growth and economic return at five weight ranges throughout the growing and finishing phases. Using this data, we were able to create a pair of quadratic equations to estimate the SID Lys to Net Energy (NE) ratio required to achieve maximum growth potential and economic return throughout the growing-finishing phase. the quadratic equation of Lys:calorie ratio, g of SID Lys/Mcal of NE = 0.0002611 x BW2, in kg - 0.0711037 x BW, in kg, + 7.284 was developed to reflect requirement for maximal growth performance from 18 to 128 kg BW. Optimal IOFC is best described by the quadratic equation: Lys:calorie ratio, g of SID Lys/Mcal of NE = 0.0001558 x BW2, in kg, - 0.04030769 x BW + 5.410. Additionally, these results suggest that the most economical SID Lys level from 18 to 100 kg is below that for maximal growth rate. However, in 103 to 128 kg pigs, the SID Lys requirements for maximum growth performance and economic return are much more closely aligned. A second project utilized 1,944 pigs to determine if balancing DCAD levels, via added KHCO3, in diets containing low or high levels of L-Lys HCl influences finishing pig growth performance or carcass characteristics. Dietary cation-anion difference is a measure of the level of monovalent ions (Na+, K+, and Cl−) within the diet, which correlates to the acid-base balance within the animal. Extreme DCAD levels, both high and low, have been shown to negatively impact feed intake and growth in pigs, previous research shows that a wide range may optimize performance.

Book excerpt: A total of eight experiments utilizing 572 finishing pigs were conducted to evaluate the effect of reducing dietary protein level and adding amino acids on pig performance, carcass characteristics, and N excretion. The valine requirement of early-finishing (50 to 80 kg) barrows and the effect of adding isoleucine (Ile) and valine (Val) in amino acids fortified low-protein diets on finishing pig performance were also evaluated. In the first experiment (Exp. 1 of Chapter II), it was determined that the CP level in the diet for early-finishing (50 to 80 kg) gilts can be reduced up to four percentage units by adding Lys, Thr, Trp, and Met, with no detrimental effect on pig performance or carcass characteristics. The second study (Exp. 2 of Chapter II) indicates that Ile and/or Val may be limiting in a four-percentage-unit-protein-reduced diet for late-finishing (80 to 120 kg) gilts. The third experiment (Exp. 1 of Chapter III) indicates that the true digestible Lys requirement of early-finishing PIC barrows is not higher than 0.70%. In the fourth experiment (Exp. 2 of Chapter III), it was demonstrated that dietary protein level for early-finishing PIC barrows can be reduced up to five percentage units by adding Lys, Thr, Trp, Met, and Ile, with no detrimental effect on pig performance or carcass characteristics. Valine was not limiting in a 10.49% CP diet for early-finishing PIC barrows with ADFI of 3.1 kg/d, and the true digestible Val requirement of early-finishing PIC barrows gaining 1.0 kg/d, was not greater than 11.4 g/d. In the fifth experiment (Exp. 3 of Chapter III), we found that decreasing dietary protein level by 4.81 percentage units and adding amino acids to the diet reduced N excretion of early-finishing barrows by 40.6%. In the sixth experiment (Exp. 4 of Chapter III), it was determined that the dietary protein level for early-finishing barrows can be reduced up to four percentage units by adding Lys, Thr, Trp, and Met, with no detrimental effects on pig performance or carcass characteristics, and reducing dietary protein level by four percentage units can reduce N excretion by 38.4%. In the seventh experiment (Exp. 1 of Chapter IV), it was determined that late-finishing barrows fed an amino acid (Lys, Thr, Trp, Met, Ile, and Val) fortified corn diet (7.92% CP) have similar performance and carcass characteristics as pigs fed a corn-soybean meal control 12.50% CP diet. Deleting Ile or Val in an amino acids fortified corn diet may decrease pig performance. In the eighth experiment (Exp. 2 of Chapter IV), it was determined that late-finishing gilts fed an amino acid (Lys, Thr, Trp, Met, Ile, and Val) fortified corn diet (9.55% CP) have similar performance and carcass characteristics as pigs fed a corn-soybean meal control 15.17% CP diet. Decreasing dietary CP level from 15.17 to 9.55% decreases N excretion of late-finishing pigs by 48.28%. Deleting Ile or Val in an amino acid fortified corn diet may decrease pig performance. In summary, finishing pigs fed a low protein diet properly fortified with crystalline amino acids can have similar performance and carcass characteristics as pig fed typical protein level corn-soybean meal control diets, and N excretion will be greatly reduced.

During finisher phase 3, 10 mg/kg of ractopamine was included in all diets. A subsample of whole pork loins was processed into chops for data collection. Another subsample from the whole pork loin and the s.c. fat from each jowl was freeze dried for fatty acid determination. Gilts had a greater (P = 0.02) (lightness) L* value and drip loss than barrows, but the ultimate pH, marbling, and intramuscular fat (IMF) of the LM were greater (P 0.04) for barrows than gilts. Book excerpt: As ethanol production continues to increase, so does the use of dried distiller's grains with solubles (DDGS) in swine diets. The effects of high concentrations of DDGS on growing/finishing pigs has caused problems with growth performance, carcass characteristics, fat quality, and processed meats. This is due to the high fiber content and elevated levels of unsaturated fats in of the diet. Since DDGS fiber is a complex carbohydrate pigs cannot digest, the use of carbohydrases to improve growth performance is reasonable. Carbohydrase enzymes may be able to help improve fat quality, however the effect of carbohydrase enzymes on fat quality has not been thoroughly researched and the effect on processed pork products has not been examined. Therefore, the objective of these experiments was to evaluate the effects of two carbohydrase enzymes on growth performance, carcass traits and quality, fat quality, and two types of processed pork products (fresh bratwurst and ring bologna) from pigs fed a diet containing 30% DDGS. Pigs were fed a one of two corn/soybean meal/DDGS diets, the only difference being the enzyme group received a combination of two carboghydrase enzymes at the expense of corn. While the pigws were alive growth performance was documented. After the pigs were humanely slaughtered, carcass traits and quality where documented. There was no effect of enzymes on any growth performance or carcass values recorded except for a slight change in the color of the loin. There was no effect of diet on the fat quality. There was a minimal effect on the ring bologna. The biggest influence of enzyme was on the bratwurst. Enzymes had a negative effect on bratwurst quality over time on some qualities. However, other qualities of the bratwursts were positively affected. These results suggest carbohydrase enzymes in a diet containing 30% DDGS does not significantly affect growth performance or carcass characteristics of growing/finishing barrows. However, they do indicate that more research is needed to better understand the effect of carbohydrase enzymes on fat quality and more importantly, processed pork quality.

Book excerpt: Dietary inclusion of sufficient lysine is very critical for optimizing pig’s growth performance. The objectives of this project were to study the effects of dietary lysine at different concentrations on (1) the growth performance and carcass characteristics, (2) the muscle gene expression profile and the possible alterations to the metabolic and signaling pathways, (3) the muscle fatty acid profile, and (4) the plasma concentrations of growth-related hormones of late-stage finishing pigs. Nine crossbred barrows were assigned to 3 dietary treatments (lysine-deficient, -adequate, and -excess diets) according to a completely randomized experimental design. During the 5-week feeding trial, pigs were allowed ad libitum access to experimental diets and water. All pigs and experimental diets were weighed individually each week during feeding trial to determine growth performance. After harvest, the carcass characteristics were determined and muscle samples were collected from longissimus dorsi for mRNA and fatty acid profiling, while the jugular vein blood was collected at the end of four weeks for analyses of three growth-related hormones. While the average daily gain showed a quadratic relationship, the dressing percentage and total lean cut weight both increased linearly with dietary lysine concentrations. Results of muscle gene expression data showed that dietary lysine deficiency may lead to decreased protein synthesis, increased protein degradation and lipid accumulation, while dietary lysine excess may lead to decreased protein degradation and increased lipid biosynthesis. Fatty acid (FA) composition data showed that different dietary lysine concentrations altered the intramuscular fat (IMF) content and FA composition, especially the unsaturated FAs. In particular, dietary lysine deficiency increased the IMF content and the proportion of mono-unsaturated FAs. Hormone analyses showed that the plasma concentrations of insulin and growth hormone were not affected by dietary lysine, whereas the concentration of insulin-like growth factor 1 was decreased by either dietary lysine deficiency or excess. Collectively, lysine may function as a signaling molecule to regulate the expression of genes related to protein turnover and lipid metabolism in the muscle of finishing pigs, causing differences in growth performance, carcass characteristics, and FA composition. IGF-1 may be a controlling growth factor that is sensitive to dietary lysine.

Book excerpt: Three experiments were conducted to determine the effect of three fermented amino acids (AA) with their respective biomass compared to crystalline AA on the growth performance of swine (n = 315 nursery pigs) and poultry (n = 1,320 or 2,100 broilers for experiment 2 and 3, respectively). Two experiments using a total of 600 nursery pigs were conducted to determine the available P (aP) release of Smizyme TS G5 2,500 phytase. Additionally, two experiments using a total of 3,483 growing-finishing pigs were conducted to determine the effects of feeding 1,500 phytase units of Ronozyme HiPhos phytase when credited with its corresponding nutrient release values. Experiments 1-3 determined that Trp, Thr, or Val with biomass appeared to be equally bioavailable and as suitable for use as crystalline amino acids in swine and poultry diets. In experiments 4 and 5, increasing phytase from 0 to 1,500 FTU/kg in phosphorus deficient diets improved nursery pig performance and bone ash characteristics. Using average daily gain, feed efficiency, and percentage bone ash values, prediction equations were developed, provided a range of aP release values for Smizyme TS G5 2,500 phytase when fed at levels between 150 and 1,500 FTU/kg in diets for 10- to 21-kg pigs. In Experiment 6, growing-finishing pigs fed diets containing high levels of phytase with full nutrient release values (CaPAA+full NE) until market had decreased growth performance and hot carcass weights compared with those not fed any phytase. Removing the phytase at the end of the grower period sufficiently recovered any loss in performance observed. A similar feed efficiency response was observed in experiment 7 with growing pigs, confirming the hypothesis that full nutrient release values attributed to phytase, especially for NE, were too aggressive and resulted in diets contributing less nutrients than needed to optimize performance.
