I desire in the preface to remind the public of the great and unique services rendered to British Dairy Farming by the late H. M. Jenkins, many years the able and indefatigable Secretary of the Royal Agricultural Society, whose lucid expositions of the dairy practices of several Continental countries have added so much to our knowledge of what other people are doing, and Whose life-work ended far too early in the grave. Book excerpt: Excerpt from Economies in Dairy Farming Some two years since, I was asked by the Proprietors of Country Life to write for them a book on Dairy Farming. Although flattered by such a request, at that time I felt obliged to decline because my time was fully occupied, and also it appeared to me that so much having been already written on the subject by older and more experienced men, to write anything on the same lines would be a work of supererogation. Thinking over the matter subsequently, in connection with the Butter Test and Milking Trials with which I have been associated during the past ten or twelve years, and recollecting the short, indeed, almost meagre reports which have been given of each such trial (not at all commensurate with the expenses incurred in carrying them out), I felt that perhaps it was my duty to detail at greater length my experiences generally with regard to the whole question of "manufacturing" milk, as noted from time to time by me at those trials. Hence the following pages. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Book excerpt: Excerpt from Better Dairy Farming: The Breeding, Feeding, Handling and Care of Dairy Cattle Professor E. H. Farrington of the department of dairy husbandry at the University of Wisconsin asks his class of farm boys at the end of each term this question, "What languages do you speak besides English?" One boy answered, "I can speak a little Norwegian and a little German, and I understand horses and cows." That is the very object in writing this book. We want to make the language of cows a little better understood by the dairymen of this country. To know about cows, the farms and the best farm practices in different parts of our great country will make a man a better farmer on his own farm. With the reading of this book we hope that farmers may have their vision broadened and perhaps a suggestion will be found that will change a practice so that a little more money may be made and saved. At the time of writing this preface farming is said to be in a bad way. The lawmakers and the others are all busy trying to help the farmer. Some good will come of their efforts. We think, however, that the most good will come through the efforts of the farmer himself. He will build for himself on his own farm and will build for himself and for his neighbors when he joins with them in the community and state enterprises which he will help to build, at the foundation first, in his own community. Co-operative effort will make for "better farming, better business and better living." The dairy farmer is the best off of all. Conditions in Wisconsin and New York and the other dairy states show that. This is no time for anything but optimism because the demand for milk and dairy products is growing and the market for these is the foundation of the business. With the market for milk and dairy products becoming increasingly good the market for surplus dairy cattle will become better. The object in writing this book is to help some with all this. We have enjoyed writing it. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Book excerpt: Excerpt from Dairy Cattle and Milk Production: Prepared for the Use of Agricultural College Students and Dairy Farmers Milk, with its products, serves as one of the most important sources of food for all highly civilized nations. A large proportion of the best agricultural lands of the world are utilized for its production. Although milk and products of milk have been used to some extent for food as far back as history records, the general use of milk as food has come about only with the development of highly civilized nations. Martiny 1 points out that the native races of America, Africa, and Australia, which have never developed past the stage of barbarism, do not use milk as food. The primitive races of Western Asia and of Europe made use of milk, as have their descendants, and according to this author, to this fact is due in no small degree the great intellectual develop ment of Europe and America. Book excerpt: Excerpt from The Business of Dairying How to Conduct Dairy Farming, for the Largest Profit IN these days of sharp competition, it is necessary for the dairy farmer to make a close study of his business if he is to succeed. Like the manufacturer, he must know exactly what his products cost him and determine the sources of his profits and losses. In fact, he should make a business proposii tion of the whole farm. We can point to one here and there who has followed this plari with wonder ful success, but the condition of the dairy industry, as seen on the average farm, points to the need of better methods and a more definite knowledge of the business. In no department connected with the farm is there more need for absolute data than in the dairy. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Book excerpt: Excerpt from The Dairy Industry in Missouri and Kansas Not many years ago it was assumed that New England and New York, with perhaps a part of Ohio added, would be able to supply the American demand for dairy products. It was thought that dairying would be mainly confined to the territory indicated, notwithstanding the growth of other sections, because the conditions in the West and South, generally, were deemed so unsuited to this industry as to prevent its extension in those directions. The development of the commercial and manufacturing interests of the East made it soon apparent, however, that the farmers of that region could not supply the demands of its teeming population for food products. Meanwhile emigrants from the Eastern States pushed westward, located in the wooded lands of Ohio and Indiana and on the prairies of Illinois, and then crossed the Mississippi to occupy the fertile lands of the great agricultural basin which includes the States of Missouri and Kansas. Cows came with the settlers and found the natural pasturage and other conditions very favorable to stock raising and milk production. Dairy cattle rapidly increased, and the farmers soon had before them the problem of how to utilize their surplus milk. Eastern demand for butter and cheese was found to increase about as fast, and the recognized "dairy belt" was gradually extended to include Ohio, Indiana, Illinois, Michigan, Wisconsin, and Iowa. It was still maintained that south and west of these States dairying could not be successfully pursued. These views were also destined soon to be proved erroneous. It is now safe to assert that a territory of nearly 100,000,000 acres within the limits of Kansas and Missouri offers as great possibilities for dairying as any equal area on the globe. Such possibilities can only become realities through the abandonment of many ideas as to what were once regarded essentials in dairying, as, for example, that flowing spring water and a reliable supply of ice must be had on every dairy farm; that dairying can be made profitable only with permanent pastures and cultivated grasses, and that the dairyman must be near the consuming market. We are now agreed that education cannot be bestowed. It must be achieved. Pupil initiative, pupil planning seasonably done and applied by local survey and job analysis methods, pupil observations and experience instantly and soundly appraiser! with a view to betterment of methods and results, preferably in connection with sizeable projects on home farms covering complete cycles of production, - these are fundamental factors in effective teaching by the project method. Accordingly, in this, as in the other books for pupils in this Project Series, there is no long pull of text that might tempt pupil or teacher aside into mere memorizing. Each section, as a rule, provides for some activity, something originated by the pupil or something given the pupil to do. Questions are raised, references are given, problems arc proposed, practicums, surveys, and contests are planned, which make it necessary for every pupil to bestir himself in order to get into his mind and his habits the substance of the course. But the treatment is intended to arouse and to develop the utmost initiative on the part of both pupil and teacher. Book excerpt: Excerpt from Dairy Farming: Being the Theory, Practice, and Methods of Dairying Far more than any other breed, because the grandest and most fashionable, Shorthorns have become cosmopolitan. They are now found in every civilised portion of the world, and in some portions which can hardly be regarded as civilised. The Shorthorn seems to be the Englishman's shadow - it follows him everywhere. In all countries, if properly cared for, Shorthorns are found to do well. Other breeds, notably the Herefords, have been introduced and extensively bred in other countries, and they too are found to prosper, without such minute care, under the new conditions; while their distinguishing characteristics, being to all intents and purposes stamped with the principle of permanence, so far as such matters can become permanent, do not change in any marked degree. Yet it is probable that foreign soils and climates will modify them somewhat in course of time. Not the least of the merits which English breeds of cattle carry with them to foreign countries is their prepotency - their ability to stamp in a marked manner their own qualities on the offspring of any of the native breeds With which they are intercrossed in such foreign countries; and in this way they are modifying the cattle of the rest of the world in a degree analogous to that in which Englishmen are modifying its manners and institutions. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from De Laval Dairy Hand Book The start was made with 20 western heifers bred to freshen the first fall. The heifers calved all right and yielded some milk. But what a surprise they did bring. The weekly profits by actual figures amounted to only 11 cents. Not much outlook for dairy success, especially when all farm and living expenses must be secured from the farm itself. The way things were going caused much anxiety in the Smith home. The family talked matters over and decided they had the wrong kind of cows. Gonse quently, the next spring every cow was sold; such cows were worse than none. Better have one good cow that will give a large yield of milk than to care for a half-dozen to yield no more. A cow and a calf were now purchased. Others were picked up in the neighborhood as opportunity offered. During the next two years this plan was followed with success. Some proved to be very good cows; others were poor. But each cow had to prove her worth from her milk record and if that record was below the standard she was sold to the butcher. The Smiths were now getting their bearings; they saw there was money in the right kind of cows. Their experience in buying showed the value and the merit in good blood. So they aspired to pure-bred stock. Shortly two cows were purchased and the price was $40 each. One gave birth to twin bull calves both of which were sold for $50 apiece. Grade bull calves were worth next to nothing. The Smiths now bought 14 regis tered cows. Each was a high producer and yielded a good profit. Light was appearing at last. As the registered stock increased the grade cows were sold, only the best being retained. At the present time the herd con sists of 100 head, young and old, and all pure-bred and registered.
