We want to make the language of cows a little better understood by the dairymen of this country. To know about cows, the farms and the best farm practices in different parts of our great country will make a man a better farmer on his own farm. With the reading of this book we hope that farmers may have their vision broadened and perhaps a suggestion will be found that will change a practice so that a little more money may be made and saved. At the time of writing this preface farming is said to be in a bad way. The lawmakers and the others are all busy trying to help the farmer. Some good will come of their efforts. We think, however, that the most good will come through the efforts of the farmer himself. He will build for himself on his own farm and will build for himself and for his neighbors when he joins with them in the community and state enterprises which he will help to build, at the foundation first, in his own community. Co-operative effort will make for "better farming, better business and better living." The dairy farmer is the best off of all. Conditions in Wisconsin and New York and the other dairy states show that. This is no time for anything but optimism because the demand for milk and dairy products is growing and the market for these is the foundation of the business. With the market for milk and dairy products becoming increasingly good the market for surplus dairy cattle will become better. The object in writing this book is to help some with all this. Book excerpt: Excerpt from The Dairy Industry in Missouri and Kansas Not many years ago it was assumed that New England and New York, with perhaps a part of Ohio added, would be able to supply the American demand for dairy products. It was thought that dairying would be mainly confined to the territory indicated, notwithstanding the growth of other sections, because the conditions in the West and South, generally, were deemed so unsuited to this industry as to prevent its extension in those directions. The development of the commercial and manufacturing interests of the East made it soon apparent, however, that the farmers of that region could not supply the demands of its teeming population for food products. Meanwhile emigrants from the Eastern States pushed westward, located in the wooded lands of Ohio and Indiana and on the prairies of Illinois, and then crossed the Mississippi to occupy the fertile lands of the great agricultural basin which includes the States of Missouri and Kansas. Cows came with the settlers and found the natural pasturage and other conditions very favorable to stock raising and milk production. Dairy cattle rapidly increased, and the farmers soon had before them the problem of how to utilize their surplus milk. Eastern demand for butter and cheese was found to increase about as fast, and the recognized "dairy belt" was gradually extended to include Ohio, Indiana, Illinois, Michigan, Wisconsin, and Iowa. It was still maintained that south and west of these States dairying could not be successfully pursued. These views were also destined soon to be proved erroneous. It is now safe to assert that a territory of nearly 100,000,000 acres within the limits of Kansas and Missouri offers as great possibilities for dairying as any equal area on the globe. Such possibilities can only become realities through the abandonment of many ideas as to what were once regarded essentials in dairying, as, for example, that flowing spring water and a reliable supply of ice must be had on every dairy farm; that dairying can be made profitable only with permanent pastures and cultivated grasses, and that the dairyman must be near the consuming market. The heifers calved all right and yielded some milk. But what a surprise they did bring. The weekly profits by actual figures amounted to only 11 cents. Not much outlook for dairy success, especially when all farm and living expenses must be secured from the farm itself. The way things were going caused much anxiety in the Smith home. The family talked matters over and decided they had the wrong kind of cows. Gonse quently, the next spring every cow was sold; such cows were worse than none. Better have one good cow that will give a large yield of milk than to care for a half-dozen to yield no more. A cow and a calf were now purchased. Others were picked up in the neighborhood as opportunity offered. During the next two years this plan was followed with success. Some proved to be very good cows; others were poor. But each cow had to prove her worth from her milk record and if that record was below the standard she was sold to the butcher. The Smiths were now getting their bearings; they saw there was money in the right kind of cows. Their experience in buying showed the value and the merit in good blood. So they aspired to pure-bred stock. Shortly two cows were purchased and the price was $40 each. One gave birth to twin bull calves both of which were sold for $50 apiece. Grade bull calves were worth next to nothing. The Smiths now bought 14 regis tered cows. Each was a high producer and yielded a good profit. Light was appearing at last. As the registered stock increased the grade cows were sold, only the best being retained. At the present time the herd con sists of 100 head, young and old, and all pure-bred and registered.
