Book excerpt: En México desde tiempos prehispánicos se ha utilizado el amaranto como fuente de nutrientes para la alimentación humana. En la República Mexicana, se cultivan dos especies: Amaranthus hypochondriacus y Amaranthus cruentus en menor grado; estad os especies son muy semejantes entre sí: son anuales, con hojas y hábitos de ramificación similares, erectas y altas. La diferencias de color de plantas y semillas son de poco valor taxonómico, ya que cada especie presenta formas de semilla oscura y pálida, y el color de la planta varía de rojo intenso a verde brillante. El cultivo del amaranto tiene características agronómicas deseables tales como: alta rusticidad, amplitud de adaptación a diferentes climas, suelos, tempreratura, bajos requerimientos de humedad, y sobretodo un alto valor nutricional, lo que lo hace como una posibilidad de cultivo potencial para zonas de temporal, y como portador de nutrientes para los sectores más desprotegidos del país.

Book excerpt: As an epistemological perspective, ‘nomadism’ is an emerging field of scholarship, offering intersectionality with eco-criticism, feminism, post-colonialism, migration studies, and translation. Much of the scholarship that uses the precepts of nomadism to read cultural texts and phenomena is scattered as separate articles in academic journals or as single chapters in books wherein the primary focus is the intersectional fields. Few book-length publications solely focus on the ramifications of nomadism; Posthumanist Nomadisms across non-Oedipal Spatiality fills that void. The fifteen chapters in this volume explore the possibilities offered by the nomadic perspective to explore a wide range of literary and cultural texts; organized into three sections, “Nomadic Assemblages,” “Non-Oedipal Cartographies”, and “Space-Time Montages”, that work as one to negate absorption into the interiority of sovereign territory. These sections are not an attempt at corralling the nomadic spirit into separate enclosures; instead, they are bands of warriors that operate the violence of the hunted animal, dehumanized human others, and earth others. The chapters are in constant multi-vocal conversations with narratives that camp on the turbulent weathers of global transitory spaces. They charter real or intellectual turfs of interstitial/rhizomatic nomadic epistemologies as political resistance to the exclusionary practices of a violently wired world. This book will appeal to post-graduate students, researchers, and faculty in the departments of literature, comparative literary and cultural studies. Researchers in sociology, cultural anthropology, gender studies, and migration studies will also find the material applicable to the expanding approaches available in their fields.

In the last few years, pseudocereals – in particular amaranth and quinoa – have acquired increased importance (which is also due to the increased demand for gluten ]free food). Worldwide, the demand for amaranth and quinoa has risen immensely, as seen in rising prices for amaranth and quinoa. At the same time, research in all relevant fields has intensified. At present there is some confusion surrounding the term ‘pseudocereals’ and what it does and does not include, for example kiwicha which is Amaranthus caudatus or kaniwa which is Chenopodium pallidicaule. Sometimes other grains are included in the pseudocereal group like chia (Salvia hispanica L), an oleaginous seed. One of the aims of the book is to clear up some of the confusion over what is included in the group of pseudocereals. The book will include: the origin, production and utilization of pseudocereals; structure and composition of kernels; carbohydrates/fibre/bioactive compounds of kernels; proteins and amino acids of kernels; lipids of kernels; pseudocereal dry and wet milling: processes, products and applications; food uses of whole pseudocereals; pseudocereals in gluten free products; and the nutritional and health implications of pseudocereal intake.
