Book excerpt: En France, le lait demi-écrémé de longue conservation (UHT) domine le marché du lait de consommation et constitue le produit de référence autour duquel est organisée toute l'offre. Ce modèle français se distingue de celui de nombreux autres pays où domine le lait frais pasteurisé. La prédominance d'un tel standard est souvent associée à la banalisation du produit, distinguant le lait d'autres produits laitiers disposant en France d'une identité culturelle forte. L'objet de ce travail est d'explorer cette situation et l'hypothèse de sa réversibilité. Nous nous appuyons sur un dispositif d'étude combinant observation empirique et économie expérimentale pour analyser les liens entre la valorisation des produits par le secteur laitier et la valeur accordée à ces produits par les consommateurs. Un premier volet du travail analyse les modalités, les dynamiques et les enjeux de la valorisation du lait sur le marché final. Nous examinons les dimensions technologiques, juridiques et commerciales de la caractérisation du produit avant d'en aborder les aspects historiques, sociologiques et culturels par l'étude de la dynamique de construction de l'offre de référence. Ces éléments sont ensuite replacés dans le cadre actuel du marché laitier. Les enjeux d'arbitrages et d'acceptabilité associés à la valorisation du lait qui se dégagent de cette analyse sont traités dans le deuxième volet du point de vue de la valeur du lait à la consommation. Nous introduisons les principes de la mesure expérimentale de cette valeur, puis présentons les résultats de deux études expérimentales qui en explorent les déterminants. La première étude traite des arbitrages entre préférences pour le goût, le procédé de fabrication et la praticité autour de l'offre de référence du marché. La seconde étude aborde l'acceptabilité des innovations autour des arbitrages entre préférences pour le procédé de fabrication des matières grasses laitières et pour leur impact nutritionnel.
