Available in PDF, EPUB and Kindle. Book excerpt: Why and how local coffee bars in Italy—those distinctively Italian social and cultural spaces—have been increasingly managed by Chinese baristas since the Great Recession of 2008 Italians regard espresso as a quintessentially Italian cultural product—so much so that Italy has applied to add Italian espresso to UNESCO’s official list of intangible heritages of humanity. The coffee bar is a cornerstone of Italian urban life, with city residents sipping espresso at more than 100,000 of these local businesses throughout the country. And yet, despite its nationalist bona fides, espresso in Italy is increasingly prepared by Chinese baristas in Chinese-managed coffee bars. In this book, Grazia Ting Deng explores the paradox of “Chinese espresso”—the fact that this most distinctive Italian social and cultural tradition is being preserved by Chinese immigrants and their racially diverse clientele. Deng investigates the conditions, mechanisms, and implications of the rapid spread of Chinese-owned coffee bars in Italy since the Great Recession of 2008. Drawing on her extensive ethnographic research in Bologna, Deng describes an immigrant group that relies on reciprocal and flexible family labor to make coffee, deploying local knowledge gleaned from longtime residents who have come, sometimes resentfully, to regard this arrangement as a new normal. The existence of Chinese espresso represents new features of postmodern and postcolonial urban life in a pluralistic society where immigrants assume traditional roles even as they are regarded as racial others. The story of Chinese baristas and their patrons, Deng argues, transcends the dominant Eurocentric narrative of immigrant-host relations, complicating our understanding of cultural dynamics and racial formation within the shifting demographic realities of the Global North.

Book excerpt: The exceptional commercial success of many Southeast Asians of Chinese origin has generated much contemporary debate about the cultural or social basis of that success. This book shows that those questions have long roots in Indonesia. Dutch colonial officials in the nineteenth century expressed alarm over the rural economy. In the twentieth century more detached assessments sought to describe and explain Chinese business methods and the crucial networks they established through the Archipelago. An indispensable volume which appeared under the name of J.L Vleming used the resources of the Duth colonial taxation service to explain the nature of Chinese commercial and credit systems. This volume contains a selection of the most important writing in Dutch (by prominent lawyer Phao Liong Gie as well as by Dutch officials) that has been translated for the first time. These extracts cover the period from 1850 to 1936, though half the volume is taken from the 1926 book edited by Vleming. Basic demographic data and the revenues drawn from Chinese-held farms are presented in a statistical supplement.

Book excerpt: Chinese cuisine has had a deep impact on culinary traditions in Southeast Asia, where the lack of certain ingredients and access to new ingredients along with the culinary knowledge of local people led Chinese migrants to modify traditional dishes and to invent new foods. This process brought the cuisine of southern China, considered by some writers to be "the finest in the world," into contact with a wide range of local and global cuisines and ingredients. When Chinese from Southeast Asia moved on to other parts of the world, they brought these variants of Chinese food with them, completing a cycle of culinary reproduction, localization and invention, and globalization. The process does not end there, for the new context offers yet another set of ingredients and culinary traditions, and the "embedding and fusing of foods" continues, creating additional hybrid forms. Written by scholars whose deep familiarity with Chinese cuisine is both personal and academic, Chinese Food and Foodways in Southeast Asia and Beyond is a book that anyone who has been fortunate enough to encounter Southeast Asian food will savour, and it provides a window on this world for those who have yet to discover it.

Available in PDF, EPUB and Kindle. Book excerpt: Coffee: A Comprehensive Guide to the Bean, the Beverage, and the Industry offers a definitive guide to the many rich dimensions of the bean and the beverage around the world. Leading experts from business and academia consider coffee’s history, global spread, cultivation, preparation, marketing, and the environmental and social issues surrounding it today. They discuss, for example, the impact of globalization; the many definitions of organic, direct trade, and fair trade; the health of female farmers; the relationships among shade, birds, and coffee; roasting as an art and a science; and where profits are made in the commodity chain. Drawing on interviews and the lives of people working in the business—from pickers and roasters to coffee bar owners and consumers—this book brings a compelling human side to the story. The authors avoid romanticizing or demonizing any group in the business. They consider basic but widely misunderstood issues such as who adds value to the bean, the constraints of peasant life, and the impact of climate change. Moving beyond simple answers, they represent various participants in the supply chain and a range of opinions about problems and suggested solutions in the industry. Coffee offers a multidimensional examination of a deceptively everyday but extremely complex commodity that remains at the center of many millions of lives. Tracing coffee’s journey from field to cup, this handbook to one of the world’s favorite beverages is an essential guide for professionals, coffee lovers, and students alike. Available in PDF, EPUB and Kindle. Book excerpt: Quality Determinants In Coffee Production presents a comprehensive overview of the main determinants of coffee quality during processing. Authored by members of the Laboratory for Analysis and Research in Coffee at the Federal Institute of Espírito Santo, the chapters in this text explain how coffee quality can be affected through each step of the main processing methods. The first section explores the history of coffee processing, covering how the processes and techniques of sensorial analysis have developed. The second section covers the evolution of these techniques and how various complexities can affect their use, plus the statistical tools that are used to increase test accuracy. Another section focuses on the relationship between fruit microbiology and coffee quality, promoting an understanding of how yeasts, fungi and bacteria effect the quality of coffee during processing. Another section is dedicated to the biotechnological processes used in coffee production, including the applicability of induced and spontaneous routes from the manipulation of raw material, the relationship between wet processing and spontaneous fermentation and the construction of sensorial routes. A final section explores volatile coffee compounds and gas chromatography techniques, including chemical and sensory maps. The majority of the reference works published on coffee processing have a pragmatic approach covering production, harvesting, post-harvesting and marketing. This work goes beyond these subjects, covering the factors that impact quality and how they lead to either qualitative reduction or gains during processing. New technological and scientific indicators for the modification and the creation of sensory routes are extensively covered, as are the international protocols used in the sensorial analysis of coffee. With its broad approach, this text presents a multidisciplinary perspective connecting areas such as statistics, biochemistry, analytical chemistry and microbiology to the results of sensory analysis using different technologies and processes. A direct relationship between these factors is established in order to help researchers understand their combined effect on coffee quality during processing.
