Book excerpt: There are various innovations and new technologies being produced in the energy, transportation, and building industries to combat climate change and improve environmental performance, but another way to combat this is examining the world’s food resources. Currently, there are global challenges associated with livestock and meat consumption, giving way to resource scarcity and the inability to sustain animal agriculture. Environmental, Health, and Business Opportunities in the New Meat Alternatives Market is a pivotal reference source that provides vital research on the development of plant-based foods and nutritional outcomes. Through analyzing innovative and disruptive trends in the food industry, it presents opportunities utilizing meat alternatives to create a more engaged consumer, a stronger economy, and a better environment. Highlighting topics such as meat consumption, nutrition, health, and gender perspectives, this book is ideally designed for policymakers, economists, health professionals, nutritionists, technology developers, academicians, and graduate-level students.

Book excerpt: This publication contains the proceedings of a seminar held in Abano Terme, Italy on November 13 - 17, 1978, under the auspices of the Commission of the European Communities, as part of the EEC programme of co-ordination of research on improvement of beef production. The programme was drawn up by a working group of specialists in beef production with the following composition: Dr. J. Thomas Belgium Denmark Prof. A. Neimann-S0rensen Dr. B. Vissac France Dr. J. R. Sreenan Ireland Prof. M. Bonsembiante Italy Dr. P. Susmel Italy Ir. H. De Boer The Netherlands Prof. J. C. Bowman UK Prof. W. F. Raymond UK Mr. I. L. Mason FAD Dr. J. C. Tayler Temporary appointment in CEC Dr. P. L'Hermite CEC The working group held one full meeting in Brussels in February 1978. The rest of the planning for the meeting was done by small group meetings and by correspondence. There were several interesting features to the seminar which contributed to its success. First, it was interdisciplinary and enabled new contacts to be developed between those concerned with beef technology and those concerned with land use. Second. different types of activity - plenary lectures. small group discussions. poster displays. technical visits and preparation of written conclusions agreed by the meeting - were included in the programme. Third, specific recommendations for future research priorities were established during the seminar.

Book excerpt: Excerpt from Cattle and the Future of Beef-Production in England Even before the war there were some who realized the differ ence between the process of stealing from the land and the operations of farming; and among this small minority there were many who saw that land kept under permanent grass was more suitable material for the thief than for the honest producer. Book excerpt: This book describes the importance of sustainable livestock production from a food security perspective in the changing climate scenario. It covers the amelioration of climate change impacts and describes the various mitigation strategies to reduce enteric methane emissions. The book targets sustainable livestock production by covering diverse concepts of amelioration, mitigation, and policy up-gradation. Further, it examines various adverse impacts of climate change on growth, meat, milk, and reproduction in livestock. Most importantly, the book covers novel aspects of quantifying heat stress response of livestock based on non-invasive methodologies, including infrared thermal imaging, sensor-based applications, hair, urine, and fecal cortisol estimation. Particular emphasis was given to describing the skin-based novel approaches to establish climate resilience in indigenous breeds. The book provides detailed descriptions of alleviating climate change impacts on shelter management, nutritional interventions, and genetics-based strategies involving advanced genomic tools. Lastly, it highlights the livestock species which could be considered ideal climate-resilient animal models to withstand the adversities associated with climate change.

Available in PDF, EPUB and Kindle. Book excerpt: “Nicolette Hahn Niman sets out to debunk just about everything you think you know . . . She’s not trying to change your mind; she’s trying to save your world.”—Los Angeles Times “Elegant, strongly argued.”—The Atlantic (named a “Best Food Book”) As the meat industry—from small-scale ranchers and butchers to sprawling slaughterhouse operators—responds to COVID-19, the climate threat, and the rise of plant-based meats, Defending Beef delivers a passionate argument for responsible meat production and consumption–in an updated and expanded new edition. For decades it has been nearly universal dogma among environmentalists that many forms of livestock—goats, sheep, and others, but especially cattle—are Public Enemy Number One. They erode soils, pollute air and water, damage riparian areas, and decimate wildlife populations. As recently as 2019, a widely circulated Green New Deal fact sheet even highlighted the problem of “farting cows.” But is the matter really so clear-cut? Hardly. In Defending Beef, Second Edition, environmental lawyer turned rancher Nicolette Hahn Niman argues that cattle are not inherently bad for the earth. The impact of grazing can be either negative or positive, depending on how livestock are managed. In fact, with proper oversight, livestock can play an essential role in maintaining grassland ecosystems by performing the same functions as the natural herbivores that once roamed and grazed there. With more public discussions and media being paid to connections between health and diet, food and climate, and climate and farming—especially cattle farming, Defending Beef has never been more timely. And in this newly revised and updated edition, the author also addresses the explosion in popularity of “fake meat” (both highly processed “plant-based foods” and meat grown from cells in a lab, rather than on the hoof). Defending Beef is simultaneously a book about big issues and the personal journey of the author, who continues to fight for animal welfare and good science. Hahn Niman shows how dispersed, grass-based, smaller-scale farms can and should become the basis of American food production.
