Book excerpt: Cassava is Africa's second most important food crop. The cassava transformation that is now underway in West Africa is fueled by new high yielding TMS varieties that have transformed cassava from a low-yielding, famine-reserve crop to a high-yielding cash crop for both rural and urban consumers. The book highlights the role of cassava as a "poverty fighter" by increasing cassava productivity and driving down the cost of cassava in rural and urban diets.

This book was released on 1988 with total page 469 pages. Available in PDF, EPUB and Kindle. Book excerpt: A joint agro-economic study of cassava in Sub-Saharan Africa was initiated in 1988 by the two International Agricultural Research Centers with mandate for this crop, i.e. the International Institute of Tropical Agriculture (IITA, Colombia). The results are expected to provide a sound information base for decision making on the planning and implementation of cassava research and development projects. As an input to the project, the docuement collection in CIAT's Cassava Information Center was scanned for its content of African origin, and the outcome was published in 1986, in the way of a bibliography on cassava production in Africa with 1051 references. From this survey it became clear that much additional information had to be sought, and consequently IITA and CIAT embarked on a joint information collecting venture. Three specialists travelled extensively for this purpose in Africa and Europe where they visited ministries, experiment stations, universities, libraries, and information centers. By this innovative approach a large mass of documents - particularly of non-conventive literature- was put together, thanks to the generous cooperation of scientists, librarians, government officers, in short, of all those approached with the request to help in this endeavor.

This book fills that gap, representing the first comprehensive research level overview of this main staple crop. Chapters are written by leading experts in this field from all continents. The book is suitable for those working and researching in cassava, in both developed and developing countries, as well as advanced students.

It can improve the taste of an otherwise bland food, enhance the digestibility of a food that is difficult to assimilate, preserve food from degradation by noxious organisms, and increase nutritional value through the synthesis of essential amino acids and vitamins. Although "fermented food" has a vaguely distasteful ring, bread, wine, cheese, and yogurt are all familiar fermented foods. Less familiar are gari, ogi, idli, ugba, and other relatively unstudied but important foods in some African and Asian countries. This book reports on current research to improve the safety and nutrition of these foods through an elucidation of the microorganisms and mechanisms involved in their production. Also included are recommendations for needed research.
