La carne cultivada se conoce como aquella que, aportando los medios y condiciones necesarios en una placa de cultivo, es fabricada a partir de células madre de los animales, sin necesidad de sacrificarlos. Es decir, hacer crecer la carne en un laboratorio. Para producir este tipo de alimento, hay una serie de elementos que deben ser analizados, como es la estructura de la matriz donde se cultivan las células, composición del medio de cultivo o asegurar la seguridad alimentaria. La fabricación de este tipo de carne es posible gracias a la ingeniería de tejidos, que ha estudiado el comportamiento de las células que, dependiendo del medio y señales externas, pueden diferenciarse en células musculares. Se requieren aproximadamente unas 20.000 hebras de fibras musculares para la generación de una hamburguesa de 110 gramos. Sin embargo, la producción de carne in vitro o cultivada requiere la realización de investigaciones en profundidad y hacer eficiente el proceso para que pueda llegar a comercializarse en el mercado. En un futuro la carne cultivada será una parte fundamental de la dieta humana, pero a corto plazo, el altísimo coste del proceso de fabricación y la falta de aceptación social es el principal obstáculo para que su comercialización sea viable.
