Book excerpt: Foram analisadas 7 variedades de arroz (Oryza sativa L.) sendo 6 indicadas para sistema de cultivo de terras altas e uma para o sistema de varzeas, com relação as suas características nutricionais e tecnológicas, antes e após a parboilização. O processo de parboilização foi em escala laboratorial, realizado em 3 etapas: encharcamento a 58þGRAUS CENTIGRADOSþ por 15 horas, tratamento térmico utilizando microondas por 8 minutos e radiação em potência de 0,95 kW, e secagem a temperatura ambiente (APROXIMADAMENTEþ33þGRAUS CENTIGRADOSþ). Os parâmetros de qualidade tecnológica analisados foram: classificação visual, incidência de centro branco, temperatura de gelatinização, teor de amilose e rendimento no beneficiamento. Com relação à composição nutricional foram determinados o conteúdo de proteínas, a umidade, o extrato etéreo, o resíduo mineral fixo e a fibra alimentar total. As variedades foram classificadas como longo-fino, preferidas pelo cosumidor brasileiro mas apresentaram grande percentagem de centro branco. No entanto, a maioria das variedades obtiveram temperatura de gelatinização intermediária à alta e teor de amilose intermediário a alto, indicando boas características de cocção e textura. A parboilização proporcionou um aumento de rendimentos de inteiros no beneficiamento, no resíduo mineral e no extrato etéreo da maioria das variedades, mas influenciou muito pouco no conteúdo de proteínas no teor de amilose.
