Book excerpt: Excerpt from Blue Hen's Chickens Cook Book The Peninsula which lies between the Delaware and Chesapeake Bays and is composed of the Eastern Shore of Maryland, Delaware, and a little bit of Virginia, has for two hundred years been famous the world over for the lusciousness of its viands and the excellence of its cooking. The recipes which tickled the palates of the Colonial planters and their visitors, and first earned for the Peninsula its fame for the highest development in the art of cooking, have descended with the family plate to the heirs of those old planters; nor has the art of the Colonial housekeeper been lost; but rather has it been refined and adapted to modern conditions and cullinary appliances. Many of the recipes have been handed down from mother to daughter, and to grand-daughter among the women of the Peninsula and are as highly prized by them as their family plate and Colonial furniture. These recipes were gathered by the ladies of The Milford New Century Club; and all were thoroughly tested before their approval. Only persons well-known for their cooking were asked to contribute. The publishers hope to perpetuate by this publication the housewifely lore of the Peninsula, and to share it with the public. It is with this idea that we offer the second edition of The Blue Hens Chickens' Cook Book to the public. Book excerpt: Dripping Thighs, Sticky Chicken Fingers, Vanilla Chicken, Chicken with a Lardon, Bacon-Bound Wings, Spatchcock Chicken, Learning-to-Truss-You Chicken, Holy Hell Wings, Mustard-Spanked Chicken, and more, more, more! Fifty chicken recipes, each more seductive than the last, in a book that makes every dinner a turn-on. “I want you to see this. Then you’ll know everything. It’s a cookbook,” he says and opens to some recipes, with color photos. “I want to prepare you, very much.” This isn’t just about getting me hot till my juices run clear, and then a little rest. There’s pulling, jerking, stuffing, trussing. Fifty preparations. He promises we’ll start out slow, with wine and a good oiling . . . Holy crap. “I will control everything that happens here,” he says. “You can leave anytime, but as long as you stay, you’re my ingredient.” I’ll be transformed from a raw, organic bird into something—what? Something delicious. So begins the adventures of Miss Chicken, a young free-range, from raw innocence to golden brown ecstasy, in this spoof-in-a-cookbook that simmers in the afterglow of E.L. James’s sensational Fifty Shades of Grey trilogy. Like Anastasia Steele, Miss Chicken finds herself at the mercy of a dominating man, in this case, a wealthy, sexy, and very hungry chef. And before long, from unbearably slow drizzling to trussing, Miss Chicken discovers the sheer thrill of becoming the main course. A parody in three acts—“The Novice Bird” (easy recipes for roasters), “Falling to Pieces” (parts perfect for weeknight meals), and “Advanced Techniques” (the climax of cooking)—Fifty Shades of Chicken is a cookbook of fifty irresistible, repertoire-boosting chicken dishes that will leave you hungry for more. With memorable tips and revealing photographs, Fifty Shades of Chicken will have you dominating dinner.

Book excerpt: “Follows Cole’s journey as she bonds with birds, learns about farming in the city and discovers some delicious dishes along the way.” —The Washington Post Chicken coops have never been so chic! From organic gardens in parking lots to rooftop beekeeping, the appeal of urban homesteading is widespread. Chicken and Egg tells the story of veteran food writer Janice Cole, who, like so many other urbanites, took up the revolutionary hobby of raising chickens at home. From picking out the perfect coop to producing the miracle of the first egg, Cole shares her now-expert insights into the trials, triumphs, and bonds that result when human and hen live in close quarters. With 125 recipes for delicious chicken and egg dishes, poultry lovers, backyard farmers, and those contemplating taking the leap will adore this captivating illustrated memoir! “It’s an endearing book, but if you don’t find the personal side charming, there are plenty of other reasons to pick it up . . . This book takes small scale chicken-keeping to a deeper level, and adds some new recipes to try out.” —Heavy Table “Surprising variations on familiar themes . . . Interspersed in Chicken and Egg are the adventures of Cole’s own birds Roxanne, Cleo, and Crazy Lulu, which makes this a charming book as well as a useful one.” —Boston.com “Chicken and Egg is both surprise and delight . . . Cole shares her journey in a warm and witty style but, because of her strong food background, she adds another layer and, as a cookbook, Chicken and Egg is very strong.” —January Magazine

Book excerpt: A foodie turned poultry farmer offers a practical guide to raising chickens in this part memoir, part chicken and egg cookbook. A love of eating and using quality ingredients led Tim Halket to build a hen house in the corner of his garden for a daily harvest of fresh eggs. Five Fat Hens is his insightful, often humorous, take on just what it’s like to raise chickens at home. More than a DIY guide to keeping a few free-range birds, this cookbook is part memoir and part lifestyle manual. Halket takes readers through an entire year, skillfully combining meditations on his passion for cooking with original recipes, all starting with the premise that even the smallest garden can include a supply of delicious, fresh eggs. Neither a trained chef nor an experienced farmer, Tim’s tips and recipes draw on his learning experiences and love for culinary experimentation. With recipes ranging from the highly original Duelos y Quebrantos and Persian Chicken Supper to variations on everyday Italian or French classics, to simple comfort food, this timely book is an engaging account of one man’s appealing lifestyle that will inspire food lovers everywhere—whether they intend to keep chickens or not. “Good recipes, engagingly told.” —The Spectator
