Book excerpt: DIVIACP Award Winner 2019 marks the twenty-fifth anniversary of the acclaimed French Laundry restaurant in the Napa Valley—“the most exciting place to eat in the United States” (The New York Times). The most transformative cookbook of the century celebrates this milestone by showcasing the genius of chef/proprietor Thomas Keller himself. Keller is a wizard, a purist, a man obsessed with getting it right. And this, his first cookbook, is every bit as satisfying as a French Laundry meal itself: a series of small, impeccable, highly refined, intensely focused courses. Most dazzling is how simple Keller's methods are: squeegeeing the moisture from the skin on fish so it sautées beautifully; poaching eggs in a deep pot of water for perfect shape; the initial steeping in the shell that makes cooking raw lobster out of the shell a cinch; using vinegar as a flavor enhancer; the repeated washing of bones for stock for the cleanest, clearest tastes. From innovative soup techniques, to the proper way to cook green vegetables, to secrets of great fish cookery, to the creation of breathtaking desserts; from beurre monté to foie gras au torchon, to a wild and thoroughly unexpected take on coffee and doughnuts, The French Laundry Cookbook captures, through recipes, essays, profiles, and extraordinary photography, one of America's great restaurants, its great chef, and the food that makes both unique. One hundred and fifty superlative recipes are exact recipes from the French Laundry kitchen—no shortcuts have been taken, no critical steps ignored, all have been thoroughly tested in home kitchens. If you can't get to the French Laundry, you can now re-create at home the very experience Wine Spectator described as “as close to dining perfection as it gets.”

Available in PDF, EPUB and Kindle. Book excerpt: Black sea bass (Centropristis striata) compose important sport and commercial fisheries along the United States Atlantic coast. Black sea bass is a temperate reef species, unavailable to bottom trawlers and limiting capture to anglers and pot fisheries. Wild stocks have been declining over the years with landings decreasing in recent decades. The demand for black sea bass exceeds supply, and the high market value has prompted research to evaluate their potential for commercial aquaculture. Spawning and larviculture methods are emerging, and some research has been conducted to establish grow-out methods for black sea bass. One goal of the research conducted at the National Marine Fisheries Service (NMFS) Laboratory in Milford, Connecticut has been to determine if black sea bass can be grown from larvae to market-size adults (454-680 grams) in two years or less in recirculating aquaculture systems, while feeding them commercial pelleted feeds. We have successfully used photo-thermal manipulation to induce spawning. Black sea bass cultured in our recirculating aquaculture systems weighed an average of 143.2 grams after one year and 244.0 grams after 20 months. In comparison, one year old fish taken from the wild on average weigh 70.8 grams, 132 grams at two years old, and 224 grams at age three. In this study, black sea bass attained weights in under 2 years that take wild stocks 3 years or more to achieve. Aquaculture of black sea bass shows great potential because of its rapid growth in recirculating aquaculture systems.

Book excerpt: "This report presents the results of a two-year study to determine habitat use and residency time of black sea bass and summer flounder at the Historic Area Remediation Site (HARS) using ultrasonic tags. In 2003, fish were implanted with individually coded ultrasonic transmitters and monitored for one year with in situ moored acoustic receivers that covered the HARS in a grid pattern. Prior to executing the field experiment, we conducted laboratory trials to develop surgical and anesthesia protocols; we also monitored the survival and growth of experimentally treated fish for about 10 months. To elucidate habitat use observations from the field, we conducted a behavioral experiment with black sea bass aimed at understanding swimming speed, affinity to structure, and interactions with conspecifics. Results of these supporting laboratory studies are also presented here"--Executive Summary.

Book excerpt: When populations of striped bass began plummeting in the early 1980s, author and fisherman Dick Russell was there to lead an Atlantic coast conservation campaign that resulted in one of the most remarkable wildlife comebacks in the history of fisheries. As any avid fisherman will tell you, the striped bass has long been a favorite at the American dinner table; in fact, we've been feasting on the fish from the time of the Pilgrims. By 1980 that feasting had turned to overfishing by commercial fishing interests. Striper Wars is Dick Russell's inspiring account of the people and events responsible for the successful preservation of one of America's favorite fish and of what has happened since. Striper Wars is a tale replete with heroes--and some villains--as the struggle to save the striper migrated down the coast from Massachusetts to Maryland. Russell introduces us to a postman at arms against a burly trap-net fisherman, a renowned state governor caving to special interests, and a fishing-tackle maker fighting alongside marine biologists. And he describes how champions of this singular fish blocked power plants and New York's Westway Project that would otherwise compromise its habitat. Unfortunately, those who cheered the triumphant ending to the campaign, as the coastal states enacted measures that enabled the striped bass to make its comeback, have found the peace transitory--there is now a new enemy emerging on the front. In recent years a chronic bacterial disease has struck more than seventy percent of the striped bass population in the primary spawning waters of the Chesapeake Bay. Malnutrition seems to be a significant factor, brought on by the same overfishing that plagued the bass in the first battle--only this time, the overfishing is devastating menhaden, the silvery little fish upon which the bass feed. Lessons learned during the first conservation battle are being applied here, highlighting a need for a whole new ecosystem-based approach to conserving species. Only with constant vigilance by concerned citizens, Dick Russell reminds us, can environmental victories be sustained. This particular fish story is a personal one for him, and he follows the striper's saga today all the way to California, where the fish was introduced in 1879 and where agribusiness now threatens its future. For his conservation work during the 1980s Russell received a citizen's Chevron Conservation Award.
