Much of his overall insights and firsthand experiences have become available through this book. Biocharculture falls very much in a vision of an agriculture that supports and makes use of natural growing mechanism. Biochar is charcoal that is used for other purposes than heating. It can be a by-product or part of an entire production system. Biochar scores on many fronts: it improves the capacity of the soil to retain moisture but also nutrients, such as nitrogen and phosphorus. It helps regulate soil temperature and contribute to climate change mitigation. It improves soil life. I still remember that Sai Bhaskar explained a tiny piece of charcoal to me as being a ‘skyscraper for millions of soil biota’. There is still a world to gain – by better understanding this miraculous microbial world and the way our soils and landscapes work and this book hopes to contribute and give practical suggestions and directions. Interesting in some parts of the world biochar is part of the production process wherein other it is not. In other words, we need to create new traditions and farming cultures, as this book very much argues. One learns everything about biochar and its uses through this book.

Sai Bhaskar’s approach has been original in many ways. He has investigated the different mixes of biomass used in different areas of India – not just fuel wood but also leaves, dung, pellets, briquettes, seeds and other materials. He then designed the different stoves accordingly. Sai Bhaskar also looked at different products from the stoves – obviously the direct heating but also the possibility of producing charcoal (Biochar) as a by-product from the stoves. This work is not lab-based but undertaken in the promotion campaigns he has been involved within Andhra Pradesh and parts of other states in India. The relevance of this work is large. Many people are and will remain dependent on local biomass for their daily needs. This issue of biomass has often associated with the degradation of the surrounding environment: the depletion of natural tree stands or the loss of nutrients to the growing cycle. It has also been associated with hardship: collecting biomass – typically by women – over large areas, and health issues because of excessive smoke from in-house fires. For all these reasons I am very happy that this book of ‘The Stove Man’ could be prepared, to share the praxis-based knowledge developed by a unique innovator and to serve as a source of inspiration and new ideas for those working in energy and development. Book excerpt: Dense phase carbon dioxide (DPCD) is a non-thermal method for food and pharmaceutical processing that can ensure safe products with minimal nutrient loss and better preserved quality attributes. Its application is quite different than, for example, supercritical extraction with CO 2 where the typical solubility of materials in CO 2 is in the order of 1% and therefore requires large volumes of CO 2. In contrast, processing with DPCD requires much less CO 2 (between 5 to 8% CO 2 by weight) and the pressures used are at least one order of magnitude less than those typically used in ultra high pressure (UHP) processing. There is no noticeable temperature increase due to pressurization, and typical process temperatures are around 40°C. DPCD temporarily reduces the pH of liquid foods and because oxygen is removed from the environment, and because the temperature is not high during the short process time (typically about five minutes in continuous systems), nutrients, antioxidant activity, and vitamins are much better preserved than with thermal treatments. In pharmaceutical applications, DPCD facilitates the production of micronized powders of controlled particle size and distribution. Although the capital and operating costs are higher than that of thermal treatments, they are much lower than other non-thermal technology operations. This book is the first to bring together the significant amount of research into DPCD and highlight its effectiveness against microorganisms and enzymes as well as its potential in particle engineering. It is directed at food and pharmaceutical industry scientists and technologists working with DPCD and other traditional or non-thermal technologies that can potentially be used in conjunction with DPCD. It will also be of interest to packaging specialists and regulatory agencies.

Book excerpt: This proceedings volume represents the culmination of nearly three years of planning, organizing and carrying out of a NATO Ad vanced Study Institute on Biomass Utilization. The effort was initi ated by Dr. Harry Sobel, then Editor of Biosources Digest, and a steering committee representing the many disciplines that this field brings together. . When the fiscal and logistical details of the original plan could not be worked out, the idea was temporarily suspended. In the spring of 1982, the Renewable Materials Institute of the State University of New York at the College of Environmental Science and Forestry in Syracuse, New York revived the plan. A number of modifications had to be made, including the venue which was changed from the U.S.A. to Portugal. Additional funding beyond the basic support provided by the Scientific Affairs Division of NATO had to be obtained. Ul timately there were supplementary grants from the Foundation for Microbiology and the Anne S. Richardson Fund to assist student participants. The New York State College of Forestry Foundation, Inc. provided major support through the Renewable Ma terials Institute. The ASI was held in Alcabideche, Portugal from September 26 to October 9, 1982. Eighty participants including fifteen principal lecturers were assembled at the Hotel Sintra Estoril for the program that was organized as a comprehensive course on biomass utilization. The main lectures were supplemented by relevant short papers offered by the participants.
