Recognition of this is reflected by the World Health Organization (WHO) Recommended Classification of Pesticides by Hazard, which was first published in 1975. The document classifies pesticides in one of five hazard classes according to their acute toxicity. In 2002, the Globally Harmonized System of Classification and Labelling of Chemicals (GHS) was introduced, which in addition to acute toxicity also provides classification of chemicals according to their chronic health hazards and environmental hazards.

Five mycotoxins or groups of mycotoxins that contaminate food commodities were evaluated at the meeting: aflatoxin M1, fumonisins B1, B2, and B3, ochratoxin A, deoxynivalenol, and T -2 and HT -2 toxins. The monographs in this volume summarize the data that were reviewed on these contaminants, including information on metabolism and toxicity, epidemiology, analytical methods for their measurement in food commodities, sampling protocols, effects of processing, levels and patterns of contamination of food commodities, food consumption, and prevention and control. Based upon this information the Committee assessed the risks associated with intake of these mycotoxins.

Book excerpt: La carne de caza es el resultado del auge manifiesto que tienen en nuestro país, este tipo de actividades. La Comunidad Autónoma de Castilla-La Mancha es una de las autonomías españolas más importante en cuanto a volumen de piezas cinegéticas abatidas, y específicamente, la provincia de Toledo, se caracteriza por su importancia en número de cotos de caza. En la Zona Básica de Salud de Valmojado, donde la caza menor es importante, existen gran número de establecimientos o Salas especializadas en el Tratamiento de este tipo de carnes, las cuales deben cumplir una serie de condiciones específicas, reguladas en la Reglamentación Técnico-Sanitaria, debiendo las Industrias alimentarias implantar un Programa específico de Autocontrol de Análisis de Peligros y Puntos de Control Crítico (APPCC), que implica a los responsables de las mismas en esta producción cárnica. Antes de desarrollar un Programa APPCC específico, se debe proceder a desarrollar Requisitos Previos, relacionados con normas básicas higiénico-sanitarias. En el presente estudio se han analizado, tanto los Requisitos Previos como el Programa APPCC desarrollado en este tipo de Salas de Tratamiento, con respecto al Diagrama de Flujo instaurado, y en el cual se incluyen, los Peligros de las distintas fases establecidas en este proceso de producción cárnica. También se demuestra, la presencia de niveles elevados de residuos de plomo procedente del impacto de perdigones, por lo que es conveniente incorporar este elemento al APPCC como peligro químico, debido a que el consumo de este tipo de alimentos de origen animal provocaría problemas sanitarios en el consumidor.
