Book excerpt: Aflatoxins are a group of highly toxic and carcinogenic substances, which occur naturally, and can be found in food substances. Aflatoxins are secondary metabolites of certain strains of the fungi Aspergillus flavus and A. parasiticus and the less common A. nomius. Aflatoxins B1, B2, G1, and G2 are the most important members, which can be categorized into two groups according to the chemical structure. As a result of the adverse health effects of mycotoxins, their levels have been strictly regulated especially in food and feed samples. Therefore, their accurate identification and determination remain a Herculean task due to their presence in complex food matrices. The great public concern and the strict legislation incited the development of reliable, specific, selective, and sensitive analytical methods for pesticide monitoring that are discussed in this book.

Available in PDF, EPUB and Kindle. Book excerpt: Mycotoxins, from the Greek "mukes" referring to fungi or slime molds and toxin from the Latin "toxicum" referencing a poison for arrows, have earned their reputation for being potentially deleterious to the health and well being of a consuming organism, whether it be animal or human. Unfortunately, mycotoxins are a ubiquitous factor in the natural life cycle of food producing plants. As such, control of the potential impact of mycotoxins on food safety relies heavily upon accurate analysis and surveys followed by commodity segregation and restricted use or decontamination through processing. The purpose of this book is to provide the most comprehensive and current information on the topic of mycotoxins and assuring food safety. Chapters represented in the book reflect such diverse topics ranging from occurrence and impact, analysis, reduction through processing and plant breeding, toxicology and safety assessments to regulatory perspectives. Authors represent a range of international perspectives.

Book excerpt: This report reveals that substantial knowledge is available about the aflatoxin challenge that plagues African farmers, other agri-entrepreneurs, and governments. Commissioned by the ACP-EU Technical Centre for Agricultural and Rural Cooperation (CTA) in collaboration with the African Union Commission - Partnership for Aflatoxin Control in Africa (PACA), this literature review reveals that a wide range of commodities that are traded nationally, regionally and internationally are contaminated by aflatoxins. African citizens and economies are negatively impacted as a result.

Available in PDF, EPUB and Kindle. Book excerpt: Aflatoxins, produced by the fungi Aspergillus flavus and A. parasiticus, are the major toxins affecting the quality of peanuts meant for human consumption. Aflatoxin contamination has implications for the export of peanuts and the health of the vast majority of people who consume peanuts in their daily diets. Peanuts producers displayed low awareness of aflatoxin contamination and low knowledge of management practices' while extension staff and traders had high awareness. Producers with large land holdings were high adopters of management practices compared to producers with small land holdings. Their marketing practises showed that the problem of aflatoxin contamination was neglected at both the production and marketing stages. This book suggests extension agencies to train farmers in management of aflatoxin contamination. Mass awareness campaigns need to be organized to improve the stakeholders' awareness of the ill-effects of consuming aflatoxin- contaminated products. This book will be helpful to create awareness about aflatoxins among researchers, extension agencies, marketing agencies, peanut producers and consumers.

They are nutrient-dense food products containing health-friendly lipids, beneficial phytonutrients, and other essential vitamins and minerals. Basic, clinical, and epidemiological research is now being directed towards understanding the mechanisms by which nuts influence human health and developing dietary guidelines for their optimum consumption. Research is also being directed towards the issues of fungal contamination of nuts, associated risks to human health, and methods of minimizing such risks. This book addresses these topics in chapters written by international experts in the field.

Book excerpt: Groundnuts, which are widely consumed in West Africa, are prone to contamination by aflatoxin during production and storage. Although aflatoxin plays a role in many of the important health risks in developing countries, individuals and governments ignore the risks because their health effects are not immediate. In the developed world strong regulations remove contaminated kernels and their products from the food systems. The objective of this paper is to examine production and marketing practices, particularly grading methods, in Ghana’s groundnut value chain to obtain a clear understanding of the sources and levels of aflatoxin contamination in the crop and how such contamination can be sharply reduced.

Book excerpt: This useful new book provides a morphologically based system for the identification of the more common Aspergillus species as well as several uncommon species, which the author has included to demonstrate the breadth of variability in the genus. The species descriptions are based on new information obtained by recording morphological observations on approximately five isolates of each species. These data was combined with previously published information to create a comprehensive species description. Species descriptions are arranged alphabetically by species name and include colony diameters, colony colors and textures, microscopic characteristics, distinguishing features, taxonomic references, habitats, and, where applicable, common synonyms and major mycotoxins. On the page opposite each species description are photos of the colonies, conidial heads, conidia, and other distinctive features. Scanning electron micrographs are included to give a more three dimensional view of the conidia. -- Morphologically based system for the identification of Aspergillus species -- Over 270 photographs and electron micrographs -- Comprehensive descriptions based on new information obtained by recording morphological observations and previously published information

Book excerpt: Aflatoxins are responsible for damaging up to 25% of the world's food crops, resulting in large economic losses in developed countries and human and animal disease in under-developed ones. In addition to aflatoxins, the presence of other mycotoxins, particularly fumonisins, brings additional concerns about the safety of food and field supplies. The
