Aflatoxin contamination has implications for the export of peanuts and the health of the vast majority of people who consume peanuts in their daily diets. Peanuts producers displayed low awareness of aflatoxin contamination and low knowledge of management practices' while extension staff and traders had high awareness. Producers with large land holdings were high adopters of management practices compared to producers with small land holdings. Their marketing practises showed that the problem of aflatoxin contamination was neglected at both the production and marketing stages. This book suggests extension agencies to train farmers in management of aflatoxin contamination. Mass awareness campaigns need to be organized to improve the stakeholders' awareness of the ill-effects of consuming aflatoxin- contaminated products. This book will be helpful to create awareness about aflatoxins among researchers, extension agencies, marketing agencies, peanut producers and consumers.

We emphasise the fungi which cause food spoilage, but also devote space to the fungi commonly encountered in foods at harvest, and in the food factory. As far as possible, we have kept the text simple, although the need for clarity in the descriptions has necessitated the use of some specialised mycological terms. The identification keys have been designed for use by microbiologists with little or no prior knowledge of mycology. For identification to genus level, they are based primarily on the cultural and physiological characteristics of fungi grown under a standardised set of conditions. The microscopic features of the various fungi become more important when identifying isolates at the species level. Nearly all of the species treated have been illustrated with colony photographs, together with photomicrographs or line drawings. The photomicrographs were taken using a Zeiss WL microscope fitted with Nomarski interference contrast optics. We are indebted to Mr W. Rushton and Ms L. Consumption of aflatoxin contaminated peanuts causes health hazards like; liver cancer, stunted growth and mental retardation, immune system suppression, allergies, and death in both humans and livestock. Recommended agronomic practices, good pre and post-harvest practices, chemical and biological control have been emphasized to overcome the above hazards. Adopting resistant varieties against Aspergillus flavus and aflatoxin contamination is considered as a cost effective strategy. Evaluation of different peanut varieties to A. flavus infection, determination of predominant Aspergillus species and levels of aflatoxin contamination in peanut varieties were the objectives of this study. Results showed that none of the varieties was immune to A. flavus infection. Differences were observed in the level of mycelial growth under different treatments. The Aspergillus species isolated from peanut kernels were; A. niger, A. flavus, A. nidulans and A. fumigatus. The aflatoxin contamination levels ranged from 6 to 27 ppb.

Book excerpt: Aflatoxins (AFs) are carcinogenic, secondary metabolites of the molds Aspergillus flavus and A. parasiticus and contaminate grains and oil seeds, particularly maize and peanuts. The risk of AF contamination exists along entire peanut and maize value chains where climate is suitable, typically among tropical and sub-tropical areas. A value chain is the complete array of activities required to produce and deliver a commodity to consumers, including intermediary processing and storage. In the Caribbean country of Haiti, capacity to prevent human exposure to toxic substances, both natural and xenobiotic, is limited. The present dissertation examined: 1) constraints to AF control among peanut farmers in Haiti; 2) contamination in maize and peanut products, as well as edible oil production as an alternative process to salvage a safe, value-added product from contaminated peanuts; and 3) human exposure to AF among urban and rural communities. My formative survey of 109 peanut farmers in the North and North East Departments underscored a constrained agronomic and socio-economic context under which farmers lacked access to credit, irrigation, pesticides, and other agricultural inputs necessary to improve production and food safety. Twentythree farmers were familiar with AFs or the fungi that produce them. AF analysis of foods sampled from 2012 to 2013 showed that samples of peanuts (3/21), peanut butter (30/32), and maize (1/30) exceeded the US Food and Drug Administration limit for AFs in human foods (20 [mu]g total AFs/kg). AF concentration was greatest in peanut butters (median of 137 [mu]g/kg and maximum of 2720 [mu]g/kg). Experiments to determine residual AFs in oil pressed from contaminated peanuts showed that 5% the AF concentration of the original kernels remained in the oil. Ethanol extraction further reduced AF concentration to 10% that of the pre-extraction oil. Among Haitians screened for AF biomarkers, detection of AF-lysine in circulating blood albumin was associated with recalled frequency of peanut consumption (p=0.0486) but not maize consumption (p=0.2032).
